My wife has been making Tarte Tartin with great success. I thought this pan would make it easier for her to flip the end product. Because the large pan is straight from the oven with burning hot apple juices, butter and melted sugar...it can be easy to burn yourself. I did it myself. I had hoped that this pan (Made JUST for Tarte Tatin) would solve that problem. Not so. My wife does not even use it. She prefers the old cast iron pan with a ceramic flat plate over it...to flip. I love this pan set and we use it for several other things...but it is not the "end all" wonderful burn prevention cure that we thought it would be. I would order the set again in a minute it is so wonderful to use!
