(More customer reviews)High initial cost is offset by not having to retrofit gas in my kitchen and by being able to install myself (no permit required). For heating a 6 or 8 inch pot, induction simply puts more power to the metal than gas or conventional electric; it is also instant on/off like gas. Each burner can be individually programmed to shut off with a built in timer--great for rice. Lowest power setting plus timer equals crock pot functionality.
Downsides... High initial cost of unit, need induction-compatible cookware, slight humming sound at high power, touch controls aren't as quick to use as conventional knobs ( but do allow precise and consistent control).
