Joyce Chen J90-0704 6-Quart Stoneware Chinese Cooking Pot, Black Review

This is a great all-purpose pot to have for baking beans, obviously, but also for slow oven baked dishes like ragouts, choucroute garnis, cassoulets and is the classic vessel for nabes, those layered one-pot Japanese meals. It makes a great soup tureen as it holds heat very well and an wonderful off-beat use for it is as a leprechaun's pot to hold the peanut butter-filled butterscotch-coated Ritz cracker cookie "gold coins" that I make for St. Patrick's Day.

Large Chinese Clay Pot (4.5 qt) Review

Large Chinese Clay Pot (4.5 qt)

This is a great pot! You can do the white boiled chicken for ten minutes and not have to worry about 20 minutes of simmering as you would with western pots! It's also great to make arroz con pollo and other Latin American stews and rice dishes. I don't think it bakes all that well since it's designed to go on top of the stove (Chinese, I hear, don't bake and they think it's a waste of energy to use this pot in the oven, don't ask!)Customer service from this vendor is fabulous. They sent me recipes, a wooden spoon, and a back scratcher. Dog got the back scratcher, they promised they'd send me another one! If you are into Chinese cooking, like I am since the Chinese restaurants are all buffet style for gringos and their families, do yourself a favor, get one of these extemely reasonably priced Chinese Clay pots, better than any LeCreuset Dutch ovens I have spent a lifetime being snooty about!

Made from exceptional clay found only in China that withstands a direct flame or direct contact with an electric burner. These pots represent a quite ancient and authentic part of Chinese cuisine. They are referred to as "sandy pots" due to their sandy exterior and course texture, yet the interior of these pots has a dark brown, smooth glaze. Many of the clay pots also come with a removable wire "cage" covering the exterior that serve both to protect the fragile earthenware and distribute heat evenly. Ideal for stews. Appealing for their traditional appearance and low cost. Multiple pots easily make a decorative set.

I searched high and low for the perfect donabe and this is it. It's absolutely beautiful and very well made. This 9.75" donabe has a 3 quart capacity and does very well on my electric coil stove. I would highly recommend this donabe.

This donabe "hot pot" is made in Japan. The design is a leaf from a maple tree that is common in the Kyoto area. This earthenware vessel is used to make "nabemono" in Japan, a warming one-pot meal popular during the winter. Traditionally, a portable stove is placed in the center of table, and the pot is filled with broth and ingredients. There are many different variations of nabemono. Broths can be as simple as water flavored with a little bit of dried kelp, to stronger tastes made chicken or miso. Ingredients often include seafood, poultry, pork, vegetables, tofu, and udon. Nabemono is meant to be eaten as a communal meal, where diners gather around the table and pick items directly from the pot.

Emile Henry Tagine, 2.6 Qt Review

I love tagine cooking. I purchased a traditonal clay one years ago. You had to soak it overnight in cold water before use. I hadn't used in in over a year and I knew I was taking a chance when I didn't bother to soak it. I even smiled as I watched the crack form and spread. At last I had an excuse to purchase this one!
Dishwasher safe! No soaking, although you do need to boil milk in it before the first use. This size feeds six. I lucked out and found a black one at Crate and Barrel Outlet.
Although I was annoyed with the upkeep of a tradtional tagine, I didn't want to switch to stainless steel or cast iron. This new glazed clay is a wonderful innovation.
This one cooks evenly. Cleans up easily and is nice enough to serve from at the table. If you are serious about the cuisine, this is the one to purchase. I'm concerned about the cast iron and stainless steel ones by other companies. Those aren't traditional materials and they conduct heat much more effeciently. The food may cook too quickly. This is as close to the original as you can get without the prep and cleanup hassles that come with it.

Emile Henry Flame Top cookware, a technological innovation. An innovation in ceramics technology, Emile Henry's new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking.Much lighter, (30%), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time. This recent innovation from Emile Henry is a break-through in ceramics technology. Unlike most metal cookware products, Flame-Top cookware can sit on a very hot open flame for an extended period of time without any ingredients in the cook pot, and they will not crack, discolor or break. Perfect for braising, browning and slow cooking due to the incredibly gentle heat distribution properties of Burgundy Clay, Flame-Top products cook evenly and thoroughly when used on top of the stove, in the oven or even in the microwave.Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the cooking food. This self-basting technique produces a more thoroughly cooked, tender and moist dish than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to uneven cooking. Emile Henry Flame-Top ceramic cookware is light and versatile, and better brings out the flavors of all cooked foods.

I was a little skeptical about the value of this warmer, but it really does a great job and is able to keep tortillas warm. The tortillas that are heated in the microwave inside the warmer are soft, and not the least bit tough or chewey. The warmer is easy to use, easy to clean, and is attractive.
