In the Le Creuset fashion, this tagine is beautifully and authentically styled. Although original tagines were made of clay, this cast model cooks beautifully and can be used on stove top or in the oven. The unusual funnel shape helps to maintain moisture in the food, and blends the flavors into mouthwateriing dishes. I love the quality of Le Creuset and am very happy to add this tagine to my collection.

Inspired by the slowly simmered, heavily seasoned cuisines indigenous to North Africa, this 2-quart Moroccan Tagine by Le Creuset is a classic example of form following function. Its distinctive cone-shaped lid promotes natural steam circulation and allows for the constant return of condensation to the base, moistening ingredients and tenderizing tough fibers within cuts of meat. And because it's crafted from durable cast iron, the Moroccan Tagine retains heat longer and cooks food more evenly and thoroughly. Traditional Moroccan tagines (the dish is named for the cookware) typically include a combination of braised meat (often lamb, beef or chicken), fruits, root vegetables, nuts, and fragrant spices like cinnamon, saffron, and ginger. Measuring 12-4/5 by 12-4/5 by 11-2/5 inches, the Moroccan Tagine makes a thoughtful gift idea or a unique addition to any cook's collection.
As part of Le Creuset's line of enameled cast iron, the cookware's low-profile, high-heat, cast-iron base distributes heat evenly and provides superior heat retention--great for stovetop cooking, as well as for browning vegetables or meat before steaming. The Moroccan Tagine's colorful stoneware lid forms an excellent seal to keep moisture and heat inside, while its conical shape also helps moisture circulate throughout so there's no need to open, stir, or turn the tagine, making food preparation a snap. The cookware can be used on any stovetop surface, including induction, and be safely used in the oven (up to 500 degrees F) or under the grill/broiler for exceptional versatility. Beautiful enough for the table yet durable enough to outlive its lifetime limited warranty, the cookware should be hand washed for best results.

I love tagine cooking. I purchased a traditonal clay one years ago. You had to soak it overnight in cold water before use. I hadn't used in in over a year and I knew I was taking a chance when I didn't bother to soak it. I even smiled as I watched the crack form and spread. At last I had an excuse to purchase this one!
Dishwasher safe! No soaking, although you do need to boil milk in it before the first use. This size feeds six. I lucked out and found a black one at Crate and Barrel Outlet.
Although I was annoyed with the upkeep of a tradtional tagine, I didn't want to switch to stainless steel or cast iron. This new glazed clay is a wonderful innovation.
This one cooks evenly. Cleans up easily and is nice enough to serve from at the table. If you are serious about the cuisine, this is the one to purchase. I'm concerned about the cast iron and stainless steel ones by other companies. Those aren't traditional materials and they conduct heat much more effeciently. The food may cook too quickly. This is as close to the original as you can get without the prep and cleanup hassles that come with it.

Emile Henry Flame Top cookware, a technological innovation. An innovation in ceramics technology, Emile Henry's new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking.Much lighter, (30%), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time. This recent innovation from Emile Henry is a break-through in ceramics technology. Unlike most metal cookware products, Flame-Top cookware can sit on a very hot open flame for an extended period of time without any ingredients in the cook pot, and they will not crack, discolor or break. Perfect for braising, browning and slow cooking due to the incredibly gentle heat distribution properties of Burgundy Clay, Flame-Top products cook evenly and thoroughly when used on top of the stove, in the oven or even in the microwave.Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the cooking food. This self-basting technique produces a more thoroughly cooked, tender and moist dish than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to uneven cooking. Emile Henry Flame-Top ceramic cookware is light and versatile, and better brings out the flavors of all cooked foods.
