Staub Black Square Grill with Silicone Handle 9-in. Review

Staub Black Square Grill with Silicone Handle 9-in.
Average Reviews:

(More customer reviews)
I had a cast iron skillet style grill pan that was a pain to clean so I started looking at the multitude of available options.
I do not care for teflon coated cookware esp. for this type of pan. I have never been able to accomplish adequate browning in a teflon pan so I nixed any grill pan with teflon from the list.
After owing and using this pan for over 1 yr. I give it five stars and would recommend it to anyone looking to purchase a grill/panini pan.
The enameled finish and foldable/removeable handle attracted me to this pan. This type of handle is a terrific space saving feature.
I had no idea that the low sides would give superior results in stovetop grilling. Steaks, chops, chicken and veggies sear better in this pan due to less steam being trapped in during cooking.
Ditto for panini.
DH wondered aloud what did we need this pan for. He now uses it more than I do. It was'nt so long ago that I felt the same and cosidered panini nothing but a passing fancy for glorified grill cheese. I now know that this wonderful Italian version of fast food sandwiches are delish, flavorful and enjoyable and easy to make.
I just use my Norpro Cast Iron Round Bacon Grill Press for the panini since I have had it several years and use regularly with my good ol' cast iron skillet. It took on a wonderful seasoned finish in a very short time and has ridges to produce the grill marks while pressing the sandwich (just luck on my part, since I purchased it before I had ever heard of panini). Only a little of the pans corners protrude with the press in place. I just preheat the press on a burner while the pan is preheating as you would any panini pan and press.
The enamel coated cast iron surface heats evenly and the coating prevents any off taste from acidic foods. The pan has only required regular dish detergent for easy cleanup after use. A mild cleanser could be used if needed. As with any cast iron, I allow it to cool before cleaning. Staub provides great guarantees for their products, but I don't think this is a concern. I have no doubt this pan will outlast me.
The helper handle is a nice addition since this pan has some heft. The foldable handle is very sturdy. The silicone cover is a nice feature that keeps the handle cool to touch as well as comfortable. The removeable handle also increases the functionality of the pan in oven/broiler use.
The pour spouts are great for pouring juices off and draining any fat away from the foods.
The 9 in. X 9 in. is just the right size for our empty nest household. Larger families may find the Rectangular Grill with Silicone Handle more suitable.
Anyone looking for a high quality grill pan that will give superior results should consider this pan.

I use this on my stovetop constantly! It fits perfectly over two of my gas burners and heats the entire (large!) surface evenly. The grill side is great for cooking burgers, chicken, carne asada, grilling peppers & veggies, etc., and the flat griddle side is terrific for pancakes (obviously) and toasted sandwiches. Very easy to clean and tucks away nicely too.

Martha Stewart Collection Sand Enameled Cast Iron Casserole, 5.5 Qt. Review

Martha Stewart Collection Sand Enameled Cast Iron Casserole, 5.5 Qt.
Average Reviews:

(More customer reviews)
I recieved this just last week as a Christmas gift. I truly love it. We have already used it to braise two cornish hens and some short ribs. We will most likely be braising a chicken in it tonight or tomorrow.
It gets incredibly hot and seems to really get the job done! It was such a breeze to brown the meat on the stove top and then add our liquid and transfer to the oven. The food I made in this has come out just absolutely gorgeous and delicious.
Our item had no chips in the enamel when we recived it and though I don't treat my cookware with kid gloves, I can say that I take pretty darn good care of my stuff, so I am hoping to keep it chip free. Contrary to the other review, I actually have a Le Crueset enameled skillet with a chip in it... I suppose it happens to the best of us.
I have only had this item for a week, but so far it's been amazing. Nothing but good things to say about it.
*edit*
(Jan 6,2010)
I would like to add to this after using this item several more times! I wanted to say that cleaning this product is a dream. After being in the oven for several hours, you'd expect all that splatter under the lid and everywhere else would be a baked on hassle... but guess what? Barely a swipe with my sponge and it's good as new!
We braised a chicken in it last night and tonight we used it to wilt broccoli rabe and cook pasta. It was great!

Universal N180 Natural Cast Iron 3pc Skillet set Review

Universal N180 Natural Cast Iron 3pc Skillet set
Average Reviews:

(More customer reviews)
I bought this set after the recent issues with Teflon. I did my research on all non-Teflon items and decided upon iron cast pans as the Aluminum pans do give off some aluminum into the food and may (key word here is may) contribute to Alzheimer's (according to some), and the Stainless steel gives off chromium and nickel into the foods, both of which I am allergic too. Pure copper with no aluminum is extremely expensive; a good set of a few items are $600+. There are also ceramic glass pots and pants made by Corning/Pyrex called Visionware (also known as Visions) that can be found on eBay (and a few are left here on Amazon) as they are no longer in production. Finally, there are also items made of ceramics and clay that should be safe alternatives
The items have been great so far, however, you will really want to do some research in google (or any other search engine) on how to care for them as there are some things that you really shouldn't do such as rinse a very hot pan in cold water (it will crack or break) etc. In addition, you will also want to so some research on how to "season" them which makes them very close to being non-stick (you basically smear them with an oil than can take high temperatures and "bake" the pans for an hour at 350 degrees Fahrenheit). I did this and I just made eggs from eggbeaters without any oil which always used to stick in my nonstick Teflon pan, but very little stuck in my seasoned cast iron pan.
The downsides are that the handle can get hot when it is left on the stove for long period of time and that you cannot stick the pan into the dishwasher (and I tried....it will come out a little bit rustier-but the little rust does come off very easily). The sizes are also a little bit on the smaller side for me. So I think I will buy one more in a larger size.
The upsides are price, no chemicals (except for some iron) in your food, easy to care for, and very non stick when seasoned. This is a great starter set.

Cast Iron Heat Diffuser with Handle by Ilsa 8.25 Inch Review

Cast Iron Heat Diffuser with Handle by Ilsa 8.25 Inch

This is a useful flame tamer for a gas stove (I don't have electric). We use it to disperse heat evenly and warm up foods in ceramic casserole dishes. Using the stove-top instead of the oven frees up much needed room in the oven. Comes with a handy detachable metal lift that should not be attached when the flame is on - only to revome the reducer after the flame has been turned off.

Le Creuset Flame Round Grill Pan 10" Review

Le Creuset Flame Round Grill Pan 10
Average Reviews:

(More customer reviews)
Le Creuset manufactures porcelain enameled cast iron cooking vessels as well as other products. Le Creuset casts these cooking vessels from molten iron poured in sand moulds that are used only once. For this reason, one grill may look like another, but each is unique in its own way.
Cast iron is a highly efficient material which absorbs and distributes heat efficiently. It is recommended that cooking with cast iron be done on low to medium heat. Using this grill on high heat can cause poor results for your food as well as making cleaning more difficult. Removing cast iron from the heat does not cool it off quickly. This helps your food stay warm while serving. Beware; iron tends to be heavy so these cooking vessels tend to be heavy as well.
Cleaning the grills are not quite as easy as its enamel coated cooking surface cousins, but is not that difficult either with a good stiff nylon brush and proper heating technique. When cleaning; be sure to cool the grill just enough so that the brush doesn't melt. It's advisable to have some warmth as a completely cooled grill will make residues stick more firmly to the surface. If needed soak the grill in soapy water for 10 to 15 minutes.
Since Le Creuset grills are not enameled on the cooking surface, you will need to break in the grill. This is a simple process of oiling the grill lightly before cooking on it. I use Pam, but vegetable oil could be used as well. Olive oil is not recommended as it tends to have a low smoking point. If you do choose to use olive oil, I would recommend having proper ventilation. Over time and use, the grill will take on a brownish-black color and require less oil. Since the brownish-black color is beneficial, do not attempt to scrub this off. Dishwashing the grill may also prevent or slow down the breaking in process too.
The benefits of cooking with Le Creuset cast iron are many, but lets get down to the grill specifically. This grill has a 9 1/2 inch round cooking surface with ridges and wells. The wells capture the drippings and fat while cooking for a healthy meal. Unlike products such as the George Foreman grill there is no top to press out all the juices which causes a drier meal.
To determine if the grill is hot, scatter a few drops of cold water over the surface, if they "Spit" and evaporate almost immediately, the surface is ready to cook on. All items should be "dry" before cooking, remove excess moisture by patting on a paper towel. Once on the grill, do not move constantly or distinctive lines will not be produced. I like to move three times after placing the food on the grill to produce diamond markings on each side.
One feature that people tend to complain about is the cost. The cost does seem steep compared to other pans made from other materials. Heck, cast iron doesn't seem like it should be expensive when comparing to that old cast iron pan past generations have used for cornbread and camping. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider that this pan will easily last a lifetime when taken care of.
PROS:
Efficient absorption and distribution of heat
Can be transferred from stove top to the oven to the table
Provides a healthy way to cook
Can easily last a lifetime
CONS:
Its heavy, as cast iron tends to be weighing in at about 4 pounds

This is a very robust piece of cookware. I give it a 3 star because realistically, you'll only be able to use one side, so pick which one you will want to use and stick to it. The reason is, once you've got one side all good and seasoned, when you flip it to use the other side, that seasoning you worked hard to get will warp and you have to start over; Also, whatever you cook on the other side will taste like stove burner because that's where it's been all this time!

I adore my pan, but still in the process of leaning ho to make them perfectly rounded. It was a pain to cure and made my house smell kinda metallic for a while. You do need to use it a few times before it becomes non stick IMO, so make sure to oil it really really well. I totally recommend it if you want a nice Aelbeskiver pan because all the other ones I've seen seem pretty cheap and the ones on those infomercials are not the traditional rounds like these. You can use this pan for other things as well, so plan to experiment! I do! I am giving 4 stars because it was a pain to cure, but other than that it's pretty awesome well made pan! It's super heavy too and will last foreverrrrrrrrrr. Your great great great grandkids will be able to use it someday!

Emile Henry Flame Top Roaster Review

Emile Henry Flame Top Roaster
Average Reviews:

(More customer reviews)
Nice, heavy pan. I bought it mostly for lasagna because it's hard to find a deep lasagna pan and this one is just right. I've also used it to bake a chicken in sauce and to bake a cake and it worked well for both. It weighs over six pounds when it's empty, though, so it is a bit heavy when it has food in it.
For some reason, the directions say that it needs to be seasoned before using it the first time. Per their instructions, I boiled a little bit of milk in it to season it and it was a little hard to get the burned milk off the bottom of the pan (guess I boiled it too long), and there was one area of black that did not come off. Tonight, I made a dish I got off of their website and some food burned on the bottom of the pan when I was browning the chicken on the stovetop and it also left black marks, even after scrubbing with a plastic mesh scrubber. The cleaning instructions on Emile Henry's website only say to soak the pan to get rid of burnt-on food. I will have to e-mail them to see if I am supposed to use steel wool on it. The marks should not affect the usefulness of the pan, though.

Measuring 17-1/5 by 11-1/5 by 3-1/5 inches, this rectangular-shaped roaster provides a 6.3-quart capacity and offers everyday convenience. Use it for roasting, braising, baking, browning, and slow cooking anything from lasagna, caramelized root vegetables, or a savory roast to fudge brownies, vanilla cake, cinnamon buns, and other sweet treats. The unit retains heat and distributes it gently and evenly, bringing out the natural flavors of the food and maintaining natural textures and colors for mouthwatering results. It can also be heated to extremely high temperatures for searing.
Emile Henry's Flame-Top ceramic cookware features Burgundy Clay construction, which can be used on any stove top (gas, electric, or halogen), though it requires Emile Henry's special induction disk when using with induction stove tops. The versatile unit can go directly from the refrigerator or freezer to a hot oven, under the broiler, in the microwave--or even onto a barbecue grill. Unlike most metal, glass, or ceramic cookware, the remarkably hard and flameproof cookware offers a high direct-heat tolerance. For example, it can sit on a hot open flame, empty, for an extended period of time without cracking, breaking, or discoloring. In addition to storing and cooking, the unit's beautiful design makes it a viable choice for use as a serving piece at the table. Other highlights include two integrated side handles for secure transport, a footed base for heat diffusion, and a lightweight design (up to 30-percent lighter than all cast iron). Manufactured in France, the roaster cleans up quickly by hand or in the dishwasher and carries a 10-year limited warranty.

I'm not at all sure what you would gain by buying one of these pans at five times the price of this one (and there are some). This one works just the way I want. It browns beautifully with out sticking and you can still deglaze a bit after for soups, stews, etc. It cleans up easily, the lid fits well...not sure just what you would get for more money spent.
It is very heavy...you must use caution on a glass cook top to lift it as you move it...I'm sure a more expensive one would be the same.
I am very happy with it. And I am not a bit shy about writing a bad review when I am not. Love this pan!

Lodge Enamel Coated Cast-Iron Skillet, Red Review

Lodge Enamel Coated Cast-Iron Skillet, Red
Average Reviews:

(More customer reviews)
This handy little skillet is actually a HEAVY WEIGHT! It has the durability of cast iron, and the convenience of non-stick coating. I hesitated when ordering because I have had teflon skillets that would flake after a while, but this is not like the non-stick of old. It has a 25-year limited warantee!
Since I have an electric stove, it took some time to learn how to adust the stove because it retains the heat so well. I finally started turning the stove off the last 10 minutes or so. That works great for me. Also, if I'm cooking a steak, I sear it good on one side, turn it, and finish cooking in the oven at 450* for another 10 minutes. That's another thing I like...the fact that the skillet can go right from the stovetop to the oven. Careful, because the handle does get very hot, and also the skillet is HEAVY because it's cast iron, but it's a good heavy!

Le Creuset Enameled Cast-Iron 4-1/2-Quart Round French Ovens Review

Le Creuset Enameled Cast-Iron 4-1/2-Quart Round French Ovens
Average Reviews:

(More customer reviews)
A month or so ago I was crusing the housewares department here at Amazon.com, looking for a Dutch oven. I'd nearly settled on Calphalon, but I read a review (gotta love these things!) which said that though Calphalon was generally the cookware of choice, for Dutch - in this case French - ovens, Le Creuset was the brand to buy. I took this advice to heart, in part because I loved the cherry red finish, and bought this 4.5 quart oven.
I want to thank that reviewer; it was one of the best pieces of advice I've had in ages. Le Creuset has produced one of the best, most versatile pieces of cookware I've ever owned. This pan heats evenly and holds the heat, but you really have to work at getting food to burn in it. It goes from stove to oven to table with real panache. Nothing sticks. Ever. Really, I'm not kidding here because I did manage to burn something by walking away and forgetting about it for an hour. But after another hour's soak and a scrub with a nylon pad, the residue was completely removed, leaving no discoloration of the lovely cream-colored enamel of the interior. I use it nearly every day now; I don't know how I got on for so long without it.
I would also like to point out that the cherry red color is very jolly. It might even provoke you to speak French (or at least with an outrageous Monty Pythonesque French accent) while you're cooking. "Allo, now we add zee ahnyon. Zut alors!" That sort of thing. Of course if you find the idea silly, perhaps you should buy the piece in a more sedate color.
Bottom line, this is a great piece of cookware. C'est vrai!

I picked one of these from the Japanese House at Disney World's Epcot Center. I had a ceramic set for a couple of years already and wanted a second set for the office. So far, it hasn't disappointed. The set is solid, heavy, cast iron with a nice coating. No rust, so far and it should stay rust-free for as long as you don't scratch the coating. Needless to say, it hasn't passed unnoticed at the office and I already know someone who ordered one of these after sharing a cup of white tea.
I am using it for brewing white tea Revolution Tea White Chai Tea, Organic, 15-Count Pyramid Teabags (Pack of 6). My boss, who lives in Oxford, England and is a life-long tea drinker became an instant convert to both white tea and to using this pot. The little iron cups can get quite hot if you pour hot tea in them (watch out) but they look cool and you should not end up with burned lips if you are reasonably careful.

In the mid 19th century, as infused teas such as Sencha became popular, brewing and serving the tea to friends and family in a tetsubin also became very popular.Benefits of Cast Iron Cookware:Cast iron ware is a boon for cooks since it heats evenly, retains heat well and lasts forever. It yields important health benefits, too! Iron-deficient diets are all too common these days and foods or liquids cooked in cast iron ware provide significant traces of this essential mineral.Long Term Care and Use (we recommend that you care for your tetsubin by following these guidelines): *Before first use, rinse your teapot several times with boiling water. But no soap!*Use the tetsubin to brew tea, not as a stove-top kettle.*Do not leave tea standing in the tetsubin for a long period of time. Dry both inside and outside of teapot completely 100% before storing or putting away otherwise it will rust.*Do not wash the tetsubin with abrasive pads or use harsh detergents or soaps. Simply rinse it with plain water and wipe it dry after each use. In Japan the natural mineral layer buildup inside a tetsubin is considered to be good for the health and helps to prevent rust from forming inside.*Do not expose your kettle or teapot to salt or oil.By following these guidelines your tetsubin will provide many years of enjoyment!
