Emile Henry Flame Top Roaster Review

Emile Henry Flame Top Roaster
Average Reviews:

(More customer reviews)
Nice, heavy pan. I bought it mostly for lasagna because it's hard to find a deep lasagna pan and this one is just right. I've also used it to bake a chicken in sauce and to bake a cake and it worked well for both. It weighs over six pounds when it's empty, though, so it is a bit heavy when it has food in it.
For some reason, the directions say that it needs to be seasoned before using it the first time. Per their instructions, I boiled a little bit of milk in it to season it and it was a little hard to get the burned milk off the bottom of the pan (guess I boiled it too long), and there was one area of black that did not come off. Tonight, I made a dish I got off of their website and some food burned on the bottom of the pan when I was browning the chicken on the stovetop and it also left black marks, even after scrubbing with a plastic mesh scrubber. The cleaning instructions on Emile Henry's website only say to soak the pan to get rid of burnt-on food. I will have to e-mail them to see if I am supposed to use steel wool on it. The marks should not affect the usefulness of the pan, though.

Measuring 17-1/5 by 11-1/5 by 3-1/5 inches, this rectangular-shaped roaster provides a 6.3-quart capacity and offers everyday convenience. Use it for roasting, braising, baking, browning, and slow cooking anything from lasagna, caramelized root vegetables, or a savory roast to fudge brownies, vanilla cake, cinnamon buns, and other sweet treats. The unit retains heat and distributes it gently and evenly, bringing out the natural flavors of the food and maintaining natural textures and colors for mouthwatering results. It can also be heated to extremely high temperatures for searing.
Emile Henry's Flame-Top ceramic cookware features Burgundy Clay construction, which can be used on any stove top (gas, electric, or halogen), though it requires Emile Henry's special induction disk when using with induction stove tops. The versatile unit can go directly from the refrigerator or freezer to a hot oven, under the broiler, in the microwave--or even onto a barbecue grill. Unlike most metal, glass, or ceramic cookware, the remarkably hard and flameproof cookware offers a high direct-heat tolerance. For example, it can sit on a hot open flame, empty, for an extended period of time without cracking, breaking, or discoloring. In addition to storing and cooking, the unit's beautiful design makes it a viable choice for use as a serving piece at the table. Other highlights include two integrated side handles for secure transport, a footed base for heat diffusion, and a lightweight design (up to 30-percent lighter than all cast iron). Manufactured in France, the roaster cleans up quickly by hand or in the dishwasher and carries a 10-year limited warranty.

Sitram 9.5-Inch Stainless Steel Non Stick Open Frypan Review

Sitram 9.5-Inch Stainless Steel Non Stick Open Frypan
Average Reviews:

(More customer reviews)
The Amazon description of this says it is suitable for "any cooking surface," without any restrictions, and the Sitram Web site specifically says "induction ready." So to be sure I e-mailed Sitram, and they assured me that it was indeed induction ready. Well, it is not. Aluminum and stainless steel, without the ferromagnetic material needed to work on an induction cooktop. Amazon did not explicitly misrepresent it, but Sitram did. If that doesn't matter to you, it looks like a fine pan. If it does matter, be warned not to believe what you read.

Mauviel M'Cook 5 Ply Roasting Pans Review

Mauviel M'Cook 5 Ply Roasting Pans
Average Reviews:

It's a well worth, lifetime investment you pass on to the next generation! Never need another roasting pan if you treat her like your girlfriend (follow instructions!). Fits over 2 burners when doing stove top stuff with even heat and, in size and performance, a no brainer in the oven. Love the big handles. It's rather heavy, although, I am a small person - so that's personally - the quality and benefits are worth the extra lift. A solid piece of hardware!

Cuisinart Chef's Classic Enameled Cast Iron 14-Inch Roasting/Lasagna Pan, Cardinal Red
This turns out to be the one of the best cooking purchases I've ever made. I used it for roasting vegetables and they turned out great. I've also used it as a casserole dish (baked and stuffed chicken) and everything came out perfectly done.
As for carrying a dish to another's house - there is no comparison to cast iron for maintaining the heat.

Throw it in the trunk and go - I am a mother of athletes and we go to these all-day (and sometimes all-weekend) tournaments. We often do big food tables for the kids and I found the EZ Grill and brought them with some burger patties. They are light and compact and I can keep them in my trunk forever! I just set them on the cement breezway, light them and in 20 minutes, I am cooking & serving the team hot, filling burgers! When we're done, I pour some water on them and put them in the recycle bin. There is ABSOLUTELY NO MESS and the clean up is the easiest ever! We are definitely taking these camping this summer. I highly recommend them for all you sports parents - you will make your players happy and fueled! Try EZ Grill - you won't be disappointed!!

Cuisinart GreenGourmet Hard Anodized Eco-Friendly Nonstick 5-1/2-Quart Saute Pan with Helper Handle and Cover Review

Cuisinart GreenGourmet Hard Anodized Eco-Friendly Nonstick 5-1/2-Quart Saute Pan with Helper Handle and Cover
Average Reviews:

(More customer reviews)
This cookware does the job providing even heat throughout your cooking process. The surface is super slick but gives you a nice foundation for searing, braising and pan frying and lends itself to a variety of sauce making applications. A simply pan reduction sauce is a snap and cleanup is a breeze, with paper towel no less. The nicest features are the stay cool recycled stainless steel handle mirrored with the ability to finish your meal preparation in the oven or broiler.
The deep rich browning created by this pan is uniform and flavorful. Don't let the competition sway you, cooking till black is not the new brown! So, if you are going green, get this cookware, it's certainly your next step! If you wish to look at one up close and feel the quality for yourself then head on over to your nearest Le Gourmet Chef outlet store, you will not be disappointed.
I recently prepared Chicken Marsala utilizing this pan and a Simply Calphalon Saute Pan. Both pans performed well but the golden brown searing and coloration was more developed in the Cuisinart pan. I also was able to adjust the gas at a lower flame under the Cuisinart pan. The Calphalon pan was searing at 8 out of 10 on the cook-top range whereas the Cuisinart pan was searing at 4 out of 10. The fond left on the pan from the searing in the Cuisinart pan was also more developed and added to the Marsala recipe quite nicely.
I will post a comment and update the link when I test the new Calphalon Unison searing pan against the Cuisinart GreenGourmet Saute pan.

A hardworking addition to any cookware collection, this 5-1/2-quart saute pan provides a wide flat surface with straight sides that neatly contain ingredients. Measuring approximately 22-4/5 by 13-8/9 by 5-1/5 inches, the pan works well for anything from searing fish, browning meat, and braising roasts to cooking one-pot meals like chicken and rice. As part of Cuisinart's GreenGourmet Hard Anodized line of cookware, the pan combines an earth-friendly design with high-quality materials to ensure long-lasting performance with reduced impact on the environment. The cookware's hard-anodized aluminum construction heats up quickly and evenly, which means less energy required to achieve the desired cooking temperature, and its exclusive, scratch-resistant, ceramic-based nonstick coating (PTFE/PFOA-free and petroleum-free) helps reduce oil consumption and preserve the environment--plus it's applied at a temperature one half that of conventional nonsticks, and it won't peel off. Furthermore, its nonstick interior ensures effortless food release without the need for excess butter or oil, which means lower fat cooking options and quick cleanup. The cookware's riveted long handle and opposite helper handle stay cool to the touch on the stovetop and are made from 70-percent recycled stainless steel. A V-shape on one end of the long handle helps dissipate heat, while a hanging hole on the other end allows for convenient storage when not in use. Even more, Cuisinart uses packaging made from 100-percent recycled materials and printed with soy ink. Oven-safe up to 500 degrees F and safe to use under the broiler, the cookware cleans up easily by hand and carries a limited lifetime warranty. From the Manufacturer

Cuisinart GG-12 GreenGourmet Eco-Friendly Nonstick Hard Anodized 12-Piece Cookware Set Review

Cuisinart GG-12 GreenGourmet Eco-Friendly Nonstick Hard Anodized 12-Piece Cookware Set
Average Reviews:

(More customer reviews)
We have now been using this set for 6 months. When we first received and began using them, the pans were perfectly nonstick so that food including eggs could be cooked without any oil, and cleaning was fast and easy. Unfortunately this is no longer true -- the pan we've used most often now requires oil in order than food doesn't stick, despite hand-washing and following the manufacturer's other directions. If no oil is used, the pan is like a traditional pan and not only does food stick, but the pan requires prolonged soaking and scrubbing to get it clean. You must also be careful not to stack the pans (chipping and scratching).
The pan handles do not get hot, but the lid handles do, so be prepared to use a potholder to move the lids.
The set must be hand-washed and handled carefully to avoid chipping, but this is not a problem for us.
I would have rated the set 5 stars had it retained its nonstick performance. The loss of the nonstick capacity and the subsequent difficulty with cleaning the pans drops my rating to two stars.
1/3/10 Edited to add: We've now been using this set for a year and I've noticed several minute to small chips out of the cooking surfaces of more that half the pieces. We do not use metal utensils (silicon only) and are careful with cleaning and storing. One piece has also absorbed the smell of the food that was cooked in it. I am now looking for a different set of cookware, and regret buying this one. While I prefer a "green," eco-friendly product, I think this one needs some improvements in quality and design.

Get everything you need to cook up delicious, healthy meals for your family with this 12-piece set of Cuisinart Green Gourmet Hard Anodized Cookware. Cuisnart's new energy-efficient and eco-friendly Cermica nonstick surface more than just reduces your carbon footprint--this nonstick coating also allows for easy food release and the ability to use less fat while cooking as well as for use in the oven for browning. This 12-piece set includes an 8-inch skillet, 10-inch deep fry with cover, 1.5-quart saucepan with cover, 2.5-quart saucepan with cover, 3-quart everyday pan with cover, 6-quart Dutch Oven with cover, and a steamer insert that fits the 2.5-quart saucepan.
The pans deliver superior heat conductivity, requiring less energy to achieve the desired cooking temperature. Harder than stainless steel, the skillet's hard anodized exterior is dense, nonporous, and highly wear-resistant for extra durability and professional performance as well as quick and even heat distribution. Additionally, the securely riveted stay-cool steel handles are manufactured using 70 percent recycled stainless steel and is oven-safe to 500 degrees F, so food can be browned on the stovetop then transferred to the oven to finish cooking.
Cuisinart's GreenGourmet cookware is designed with an exclusive Cuisinart Ceramica nonstick surface, which features a petroleum-free, ceramic-based coating that is applied at a temperature one half that of traditional nonsticks. The coating does not contain PTFE and PFOA, substances often used in nonstick cookware that have raised health concerns over the years. It was also developed using manufacturing techniques that reduce harmful carbon emissions by consuming less energy. The coating is also water-based, unlike other nonstick coatings on the market, which are solvent-based. In addition, Cuisinart's cookware has a scratch-resistant nonstick surface that won't peel off. The new cookware conforms to FDA and European RoHS standards for environmentally sound products.
These pans should be hand-washed with a mild detergent, and they carry a limited lifetime warranty against defects. Cuisinart also gets some green cred from the packaging, which is made from 100 percent recycled materials and is printed using 100 percent biodegradable soy ink. --Agen G.N. Schmitz

Average Reviews:

Despite the bad reviews, I also tried this pan. It is awful - DON'T WASTE YOUR MONEY!
To address issues other have had -
(1) It was perfectly flat out of the box, but warped as soon as medium heat was applied. Probably because it is so thin. Note the 10" crepe pan weighs as much as this monster of a pan, and appears to be at least 3 times thicker.
(2) It is way too thin to heat evenly - I think our heavy duty cookie sheets are just as thick! To check it out, I used an infrared thermometer and found out that once the hottest part of the pan reached about 350 (ideal for things like eggs and pancakes), there were parts that were 75 degrees cooler. This means burnt eggs and raw pancakes. Yum.
The size would probably make a good chicken fryer for a large family, but it has no top, so I'm not sure what you really could do with it, so mine went back today.

Cuisinart PRC-12 Classic 12-Cup Stainless-Steel Percolator
Average Reviews:

I do not understand what has happened in the coffee maker industry. It seems as if every coffee appliance I buy fails. This one is no exception. I bought this one only because most of the reviews praised it. Now I am sure that the reviews are phony and must be posted by the manufacturer. There is no control over the time of percolation which for whatever reason has been designed to be too short. The coffee comes out weak especially if you try to make less than 12 cups, the water just doesn't make it through the strainer for less cups??? The manual suggests using 20 spoons for 12 cups of strong coffee. At this rate I will essentially be using double the coffee grinds to make the same amount of coffee as I did with a much older Faberware I had and the coffee is still weak. The new faberwares are just as bad as everything else manufactured these days. The reviews and the item description also touts that this coffee percolator has a glass knob. This is an outright lie, it is plastic!!!! I was initially pleased with the design although I feel it is made with a lighter guage metal than it should be. I would gladly pay double for this product if it worked. Don't buy it, it is another coffee maker dud!!!!!

Brewing from 4 to 12 cups of coffee, this classic stainless-steel percolator offers an elegant way to serve coffee to dinner guests. The unit circulates piping hot water through coffee grounds and pulses up into the glass knob on top to create the familiar percolating sound that coffee lovers love. Its ready-to-serve light indicates when coffee is ready to enjoy, while the detachable cord provides the ability to serve fresh perked coffee right at the table without any hassle. Other useful features include a precision drip-free spout, an easy-grip knob on the unit's lid, and a stay-cool bottom that allows the percolator to sit safely on any surface without scarring. The appliance combines present-day technology with the retro look of a '50s kitchen for creating a perfect compliment to any kitchen decor. We have had the 10" griddle for 2 weeks. My husband uses it almost every morning. How do I clean it? Rinse it out with a little dish soap! This is the best piece of non-stick cookware I have ever owned. It is so much better than the old Teflon, and easier on the environment.
07-24-09: Here's an update, Gang. We have two of these now, and they are still going strong. Do not put these in the dishwasher. My son made that mistake, and ruined his little griddle.

Cuisinart Multiclad Pro Stainless 6-Quart Saucepot with Cover Review

Cuisinart Multiclad Pro Stainless 6-Quart Saucepot with Cover
Average Reviews:

(More customer reviews)
I've cooked with, burned bone dry, and cleaned regular All-Clad almost daily for years so I am pretty familiar with its performance. I'm happy to report that this first Multiclad of mine performs similarly: boils quicker than regular pots with minimal hot spots, and cleans easily. [...]
Instead of going cheap or being a complete All-Clad copy cat, Cuisinart decided to throw in some improvements:
- Longer side and lid handles for cooler handling
- Brushed finish on exterior that goes about 3/4 of the way up hides scuffs
- Impeccable finish. Can't say the same for an All-Clad sauté pan which I payed full price for :(
- Better quality stainless steel? Maybe I just got a good batch, but the luster seems to suggest higher chrome content
Great offering Cuisinart! Keep up the quality and continue to be cost competitive vs. All-Clad and I will be back to supplement my cookware collection with Multiclad individual pieces. And BTW, this 6 quart is indispensable if you are cooking for 3-4 people.

Cuisinart Chef's Classic Saute Pans Review

Cuisinart Chef's Classic Saute Pans
Average Reviews:

(More customer reviews)
This Cuisinart Chef's Classic saute pan has quickly become my favorite pan. It's huge - a full 12" across - which makes it very versatile. The pan conducts heat extremely well and is oven safe to 500 degrees. The handle is very sturdy, reasonably comfortable, and stays cool (outside of the oven, of course). The lid fits tightly. Both the interior and the exterior are very shiny and attractive. All this and it's easy to clean. Yet this pan sells for just a fraction of the sexier brands like All-Clad or Calphalon.
The chief reason for the great price is due to the construction. This is known as a "disk bottom" pan because it has a highly conductive aluminum disk embedded in its base. The really expensive brands feature "cladding", where a layer of conductive metal (usually aluminum) is embedded throughout the entire pan. Although the cookware industry loves to say that disk-bottom pans are inferior, test after test proves this claim is untrue. After all, we don't cook on the sides of a pan; we only cook on the bottom. See Cook's Illustrated magazine, May/June 2003, for a great discussion of this.
There are a few reasons why this pan might not be right for you. This pan's size makes it fairly heavy, so if you have arthritis or weak hands, you might want to opt for a smaller pan. Similarly, this pan might not fit on those tiny stovetops or ranges that you sometimes see in "galley" kitchens in apartments. But if you want a large, durable, high-quality saute pan at a fraction of the cost of the big-name brands, this is the pan for you.

Cuisinart 77-17 Chef's Classic Stainless 17-Piece Cookware Set Review

I bought these to replace some 6 year-old nonstick pots and pans which warped like....well, to make a long story short; this time, I am going Stainless-Steel! Although I would love to have an All-Clad set, but where else can you get a quality 17-Piece like this for more or less around $200 - and ships for FREE from amazon?
I have read many reviews (many negative ones) and this is my conclusion:
1.) Yes, 'Stainless-Steel' sticks! Not to mock this, but that's why 'Nonstick' cookware was invented - perhaps for the folks that do not know how to cook in stainless-steel. Easy remedy: return your set for a Nonstick set...if not, a little oil and lower your heat will do the trick. But, in addition to my stainless set, I will always have one nonstick skillet handy for my eggs (it's just much quicker and easier). But for searing and browning; there's no comparison to stainless-steel!
2.) Some complaint that the sides don't heat up compared to other brands: Yes they do, if you want to spend a little more $$ for the 'Multi-Clad' line. Also, unless you plan on cooking your food "on the sides", otherwise the encapsulated base heats evenly and works flawlessly for me.
3.) Stains, Marks and Colorful Swirls - If you use it to cook food, then expect the usual marks and normal wear - maybe even some tear. My solution for all of the above: 'BKF', OR unless you plan on displaying it for good.
The set:
There are TWO different 17-Piece sets available from the Chef's Classic line; the other one comes with a 2 qt. open 'Saucier' (and odd sizes for the rest) but I opted for this one because it is more versatile beginning with a 1.5 qt. Saucepan, then 2 and 3, a 12" Covered Skillet and for the Pasta Insert, etc, etc..
Again, for the money, they are as good as you can get. The product has a very solid feel to it and an even-weight distribution - light, yet heavy enough to do the task. Although I did find some minor flaws; like a few minor buffed-out scratches by the bottom edge between the encapsulated base on my 1.5 qt. The 'lips' on some of the larger pans (closer to the handles) seem to have bent down a bit; this produces a very small gap when the lid is covered, particularly on the 12" skillet where you can see an 'arch' effect with its lid on (the large lid is uneven on this one) and pressing it down once tends to reduce the effect. Though nothing significant, but it just appears to break that 'vacuum seal' and not so perfect tight-fit lid that was claimed by the mfg.
I have put all of them to a rigorous test for the '08 Christmas - '09 New Year's feast and they have performed very well. It cooks evenly on my old electric 'coil' stove top burner, although it could've been much better if I've had a gas range, this way I have more control of the cooking temperatures (very essential for heavy-bottomed cookwares).
Pros:
*Design - lip for spill-proof easy pouring.
*Good heat distribution (not great).
*Oven safe up to 450 degrees, that's high for a set priced like this.
*Handles: well balanced and stays cool no matter how long it's been on the burner.
*Most lids are interchangeable, especially for the 8" & 10" open skillets and they also fit other non Cuisinart that I have laying around.
*Nicely polished stainless-steel exterior and lids.
*Sturdy and well weighted/balanced.
*Well priced.
Cons:
*Workmanship and Quality Control (minor, this reduces one star).
*Slow to heat (especially the 9 qt Stockpot for cooking pasta compared to my other pot with the same amount of water).
*Pasta insert bottom sits a bit high (if sat lower, can prevent the use of more water so heat up time can be faster and to avoid boil-over spills).

This is a beautiful set of cookware and, I think, a great value...I paid $189.99 for 17 pieces, 15 of which are pots, pans & lids and 2 inserts..for pasta and for steaming. I like that there are 2 of the same size lid. You always get 1 lid that fits 2 items in the set and I would always use them at the same time and only be able to cover 1. No worries with this set--there is 1 lid for each. Also, I did a lot of price shopping before I picked this one and it's the only brand that calls it 17-piece and gives you all cookware. Every other set I saw that was over, say, 10 pieces-- the extra was knives or plastic utensils vs pots and pans. If it was 17 pieces, 7 to 9 of them were bowls, utensils, knives, etc. Rip offs for the prices they charged. And finally..the outside is nice and smooth, not ringed or otherwise textured...makes for nice cleanup and hopefully they'll stay nice looking longer than their predecessors. The ONLY thing I'm not thrilled with is that the lid handles do get warm...even hot. The pot and pan handles don't, but the lids definitely do. But for the price and quality? I have potholders.... Otherwise I would give it 5 stars. What the heck..5 it is!

T-Fal Ultimate Stainless-Steel Copper-Bottom 12-Piece Cookware Set Review

When we noticed our non-stick pans were losing their non-stick (into ours and our childrens food) we decided it was time to look at the alternative to teflon and non-stick coating. We waffled over whether to go cast iron or stainless. I was worried about cooking with stainless because of the sticking issue but decided to bite the bullet and went ahead and purchased these. I have to say, we LOVE them! My husband is able to make the most amazing omelettes without leaving half of it behind. I haven't had much trouble with sticking at all. Scrambled eggs and hash browns seem to be the worst so far and with 15 mins of soaking the pans in water I am able to just scrub them clean with my nylon scrubby sponge. They are tough and durable and seem to put up with alot of use. We aren't occasional cookers, as a family of five these pots and pans get used daily. The price is right but dont let it fool you! Can't say enough.

A beautiful choice for those looking to set up a first-time kitchen or to add to a growing repertoire, this 12-piece cookware set provides an array of essentials. It consists of an 8-inch saute pan, a 10-1/2-inch saute pan, a 1.1-quart covered saucepan, a 2.2-quart covered saucepan, a 3.2-quart covered saucepan, a 5-1/2-quart covered Dutch oven, and two handy tools--a spoon and a slotted turner. The saute pans offer gently curved sides for flipping food or sliding an omelet or grilled cheese sandwich easily from the pan to a plate, and the saucepans come in handy for cooking breakfast oatmeal, heating up soup, or making marinara sauce. The included Dutch oven holds a heap of chili, chicken and rice, and other one-dish meals--start by browning meats or sauteing onions, then add liquid and other ingredients to finish on the stovetop or in the oven. Both the spoon and the turner come with hanging holes for convenient storage when not in use.
Crafted from high-quality stainless steel, each piece features a multi-layer stainless-steel base that encapsulates a thick-gauge aluminum core with a copper disc to distribute heat evenly, eliminate hot spots, and prevent warping. Long stainless-steel handles on the pots and pans are riveted for strength, ergonomically designed for comfort, and offer hanging holes for convenient storage. The Dutch oven offers side loop handles for easy lifting and carrying. The cookware also provides glass lids that come with stainless-steel loop handles and that help trap in heat, moisture, and nutrients when cooking, plus make it possible to check on food at a glance without letting heat escape. Another thoughtful detail includes interior measuring marks that come etched into the wall of the pans. Suitable for induction cooking and oven-safe to 500 degrees F, the cookware cleans up easily by hand or in the dishwasher and carries a limited lifetime warranty.

Cuisinart WM-SW2 Dual-Sandwich Nonstick Electric Grill Review

Cuisinart WM-SW2 Dual-Sandwich Nonstick Electric Grill
Average Reviews:

(More customer reviews)
The product does exactly what it is billed to do: it grills sandwiches quickly. The problem is that the grill is very small, so normal grocery store bread is way too big and it hangs out the side. In addition, if you want to make a bigger sandwich, i.e., stacked with several ingredients, the lid will not close and lock without Herculean strength and the risk of burning yourself. It does OK with two small pieces of bread and a small amount of cheese. But, for that, it's just as easy to heat up a nonstick frying pan. It would be, however, handy for students in dorms or others with no access to a stove.

Cuisinart CGG-200 All-Foods 12,000-BTU Tabletop Propane Gas Grill Review

I just got this grill...it's a state of the art tabletop grill. The grill is already put together, so it's essentially ready to be used "out of the box". The grill is very light, so it's efficiently portable and easy to carry. It can fit on small or large tables and comes with a stainless steel veggie plate that is great for cooking vegetables, kabob's etc. It's got a easy to attach catch pan dipper that just slides on under bottom of the grill. The grill starts immediately (push and turn to light the burner) and the heat comes on quick; the temperature gauge on the top is very accurate and allows superior cooking capabilities, which is the best part of this grill. i cooked chicken the first night i got the grill, and it came out perfectly. For those of you using Weber or other more commercial grills, I'd recommend looking at this. I use to have a weber, used for tailgates etc - this grill is 10 times better and reasonably priced for it's quality.
