I've owned this pan for about two years ... it's simply wonderful. The Calphalon Commercial line is the top of the line, just like the Professional, but with stay-cool handles. The thick, sturdy aluminum heats up quickly and evenly, and goes from the stovetop to the oven up to any temperature.
My favorite dish to make with this pan is a large omelette for two to four people. You saute the onions, etc., until carmelized, then add the whipped eggs, top it with diced tomatoes, basil, oregano and cheeses, then broil at about 450 for a couple minutes until browned. Simply wonderful!
I also cook stir frys, poach fish, bake casseroles, and brown meats in this truly Everyday Pan.
Now, for the issues: As with all true Calphalon products, you can not put hard-anodized aluminum into the dishwasher. It will damage the surface, leading to pits and discolorations, and void the lifetime warranty to boot!
Second, this is not a nonstick pan. If you want nonstick, buy Calphalon Commercial Nonstick, the best ever made (The Commercial nonstick line has the more advanced LRS3 coating versus the much less effective LRS coating on the cheaper Professional Nonstick II line).
To clean, simply buy a Dobie pad or its equivalent. For the tough stuff, I find a little Bon Ami or Dormond cleaner does the trick without too much effort.

I REALLY hate to cook but using these pans are great. Clean up is easy, just put them in the dishwasher. The see-thru lids are wonderful, too. Just remember the following:
1. You cannot use any spray-on cooking spray, it makes the pots/pans sticky.
2. Use low heat, these pans disburse heat very well.
3. You can use metal spatulas/utensils.
4. If something stuck on the pans, follow the directions.
But these pots and pans are great, I really recommend them.

I have been a gadget junkie, an electric everything person. With a kitchen full of appliances I have decided to clear it out. I have control of the heat, beautiful grill marks and it is a breeze to clean. This pan was a PERFECT solution to the George Foreman that I never really believed was clean after use anyway. The pan grills everything from burgers to pounded chicken breasts without the fat. No nasty dip pan to forget either. Simply put, the one for me. BTW, I use gas, I cannot rate this product for electric stoves.

I would rate this 4.6; reasons to follow:
To start off, I spent around 5 months of looking into cookware before I made a decision on these. Some of the "Honorable mentions" would be All Clad, Emeril Ware, Simply Calphalon, Calphalon One, Calphalon NonStick, and the Calphalon Anodized. After much debate, handling, and "weighing of pros and cons", I settled on this set.
The BreakDown:
I LOVE this set and would definitely purchase these lil' gems again. I plan on getting married soon and I'm the more of the cook in the relationship; hence, I was looking for something long-term and that both of us would feel comfortable using.
THE SELLING POINTS:
Stylish, brushed stainless steel coating. Looks good now, should still be in style later on. Traditional look with a contemporary style.
See-through lids (although it fogs up and you can't see anything anyway, it's a splashy idea nonetheless)
Smooth handle with "Y" connected handle - This is GREAT since the heat transfer area is slight and really keeps the handle safe to the touch. The other thing with the handle is that it's easy to hold even with the heavier pan (3-quart sauté pan). When I checked out All Clad's cookware, their handles hurt my hand. Theirs is in the shape of a sharp edged trough - I could barely hold the thing without pain; and this was before food was in it.
Weight: These don't really weigh all that much compared to some of the other brands. By no means is it lightweight; but it provides a "solid" feel to it. My Fiance, who has small hands (ring size 3) doesn't have a problem handling these. She used All Clad and hated the handle design and the weight of them.
Even Heating: it's been mentioned before, but these really do heat up evenly. Some (Emerilware) have this little copper/metal base on the bottom of the pan. Pretty much only the food above the base gets cooked and the outsides don't. I've never had a problem with uneven cooking, even with a largely stuffed pan. Don't misunderstand this, you still do have to rotate food while cooking; but this isn't a serious concern.
Non-stick: Although this set is NOT non-stick. It sure has some of it's properties. I can make a fried egg with no problem and saute stuff with no sticking. IF food does start to stick, see Tip 1 below.THE BLAHHH:
Heating: It IS true...these will heat up quickly. DO NOT put these past HIGH! Even Med-High is pushing it. In my experience, I can saute onions, peppers, chicken ect at low-med heat with no problem. I can not tell you how many times I've burned olive oil in these things; and it's a $***& to get off. If you do happen to burn stuff in these, get BarKeeper's Friend. It takes off most of what you had on there.
Tip 1: I found out that after cooking a particularly "dirty" dish (or if food starts to stick to it), I'd have to use BK Friend to get it back to where food (eggs in particular wouldn't stick to it).

Edges: You'll notice that there's an edge for where the lid fits comfortably in place. The problem here is that if you burn something in the pan, you'll need a knife/razor blade to scrape this stuff off. Even BKF won't get off some of this stuff if you burn it on good enough. I like the edges, but the fact that there's no way to really clean this is a con.
Scratching: Ok, here's the deal with this. Calphalon DOES say that you CAN use metal utensils with this set. Using metal utensils doesn't hurt the cookware; but it WILL scratch them. I use wood or plastic with these and have had great luck with it. In the case that I do need to scrape stuff off the bottom. I have no problem with using metal. If I'm somewhat careful, I might inflict a minute scratch.
Washing: This really isn't a Con per se, but it can be a turn-off to some people. You WILL have to hand wash these and DRY them when you're done cooking. No air-drying here. It'll leave water marks and food will stick.
Tip 2: always use hot soapy water when washing this stuff and never put cold water in these when they're hot in order to get the "bits" off. You'll ruin it and void the warranty. Conclusion:
From talking to other people, this set seems to be a bit more finicky about it's care and use than some of the other brands. For me, this has been a "Smooth" set to work with and it seems to be a great tool. Something that I'll be using for a rather long time. It is one of the more expensive of Calphalon's line, and you can't always find this line. Get the stuff early, and get all the matching stuff that you'd want - it might not be here forever.

This pot is the perfect size for a standard soup recipe. I have the Dutch oven and the 6-qt stock pot as well, but I still wanted this pot. I have not been disappointed. I like the taller shape; it jut feels more like a soup pot to me (I understand this is completely subjective.)
All-Clad Stainless is my favorite line of cookware. The clad technology means even heat conduction and it works on induction cookware. An extra bonus for me is the easy clean up -- throw it in the dishwasher. Whne necesary, polish with a Bar Keeper's Friend and it will look like new forever.
If you are choosing between this and a Dutch oven, go with the Dutch oven because the shape is more versatile. This pot is not a must-have, but a great have if you make a lot of soup and are looking for an addition to your All-Clad set.

I received this set as a gift three years ago, and I really love the set. At the time, I was not much of a cook and just out of college, but I am now married and we cook all the time with these pans. They are super sturdy and feel hefty without too much weight. I appreciate the "strain" feature and use it regularly.
The company also stands behind its products and responds to customers via email. I was missing one of the lids to the pans after a move. I contacted them about it, and they helped me to replace the piece. It was great service on their part, and although I know these pans are going to last me for years and years, I will probably buy WearEver again.

Mine is over 15 years and still looks and works like new! This is a uniquely valuable pan. You can crank up the heat to high, cook quickly with assurance of smooth even heat, then rinse it under the fawcet to swish absolutely clean while it's still hot. AMAZING. No risk of warping or damage. No problem with sticking. And because of its density and superior conductivity, NO problem with burnt foods. While I love my LeCreuset, it can't handle high heat. Scanpan is a natural for things that like high heat. If you haven't tried this brand yet, this pan would be the one to try first.

This is the best nonstrick griddle I have purchased. You only need to heat medium to medium-high to get the best result. I use a little oil to give flavor to the food I am cooking and everything slides right off! I use it to make a lot of chicken. The pleasant surprise is that I can now make eggs over easy on medium heat - sets nicely to be able to flip without breaking the egg and without overcooking it. This is the first pan I have ever been able to achieve this. Since it is such a nice size, I cook eggs and ham and other items all at the same time.
Unlike other nonstick pans I have purchased in the past, it has retained its' "nonstick".

Received our set in 4 days, and the quality of the pots and pans are vastly superior to most others in the same price catagory. Amazon photo only displayed 10 pieces, which is exactly what we received. The box indicated it was a 12 piece set, but the spoon and spachula were both missing. If you are looking for T-Fal French cookwear, this may or may not be it since the box says made in China, Hungary, France and Italy. Did not say made in France anywhere on the pans like our old one. Will be interesting to see if these last as long as the French made pans. In any case, a nice buy for under $100, especially with so much other product out in the marketplace from other manufactures that is essentially useless junk after 4 months use.

For a good even heat, excellent quality of workmanship, and a dependable name, I can't think of anything better than All-Clad. For years, I used cheap cookware store non-stick skillets and hand-me-down pots and pans my mother used when she first got married. What a difference it makes.
Most cookware is way too thin, which leaves you with hotspots. For years, I would make up for this by using a cast iron "defuser" to even out the heat and keep the direct flame off the bottom of the pan. I don't have to do this any more. With the triple-layering, you get even heating, regardless of whether it's the middle of the pan or the outer edge.
Personally, I like the stainless. MC2 wasn't around when I bought mine, and I might have chosen that because of the low-maintanace exterior, but I'm not regretting it either. I don't have to be worrying about scratching through the coating with it and it cleans up easy enough with a little water and even less elbow grease.
Cooking will always be a chore, even if you enjoy the act in itself, if you never invest in good cookware and good knives. This is the first step on at least one of those. You might also wish to add a double-boiler, the steamer insert and a 1 qt. saucier; and maybe a larger stock pot (12 qt. if you can afford it), but this really lets you hit the ground running.

First off, this is a carbon steel wok so you do have to season it and keep it seasoned. I like that because I think it adds more traditional flavor to the food. The wok is very durable; I baked it in the oven for almost 10 minutes and the wood handles were still OK. =) The only thing that seems a little flimsy is the wok cover - but it's still OK. I use my wok everyday and I cook almost everything in it - I steam, fry, boil.. I've even made steamed desserts in it (Malaysian recipe). Love it!

We have used this pan every weekend for a year. Don't bother making mix from scratch - Hungry Jack's "just add water" pancake mix makes wonderfully light and fluffy Ebelskivers. We add blueberries and raspberries to our Ebelskivers (fresh in season, frozen but thawed in warm water the rest of the year).
Yes, it is nonstick but I find a little butter is necessary to keep the Ebelskivers from sticking if they have fruit in them, plus the butter is essential to taste, in my opinion. I add a small, thin slice of butter to the bottom of each Ebelskiver hole once it's hot (heat over low or medium low heat). Once the butter melts, add batter to each hole to just slightly below the hole's rim (beware, center hole heats quickest, so add butter to that hole last and add batter to that hole first). Now add fruit or jelly to center until batter rises to rim or just above the rim.
Once brown on bottom, use a small silicone heat resistant spatula to flip the Ebelskivers over. While the flip takes a little practice, it is easy to catch on to. Trust me, guests and family will be impressed with these unusual breakfast treats AND will be amazed at the taste! We top our Ebelskivers with real maple or blueberry syrup and a small dollop of whipped cream ("Reddy Wip" make not be haute cuisine, but it sure tastes good!).
NOTE ABOUT CAST IRON: We also own a cast iron Ebelskiver pan, which we hate. No matter how many times I've tried to season and oil the pan, the Ebelskivers stick - which ruins the Ebelskivers. Plus, I have a bad neck which is irritated by trying to use caste iron, which is very heavy and difficult to use for making Ebelskivers. Just be sure to wash the nonstick pan by hand and don't use forks or other metal utensils to turn the Ebelskivers.

PROS:
-Non-stick works really well; there is hardly any sauce left in the pot/pan after you simply pour it out.
-The handles do not get hot.
-Lids fit well and are very high-quality.
CONS:
-Scratches easily.
-The bottom of the pots and pans are ribbed and hard to clean.
-We used the pans on a gas stove, and the non-stick wore off in approximately a year (not due to scratches but probably due to the heat). We are looking for a new set of longer-lasting cookware.

I bought these to replace some 6 year-old nonstick pots and pans which warped like....well, to make a long story short; this time, I am going Stainless-Steel! Although I would love to have an All-Clad set, but where else can you get a quality 17-Piece like this for more or less around $200 - and ships for FREE from amazon?
I have read many reviews (many negative ones) and this is my conclusion:
1.) Yes, 'Stainless-Steel' sticks! Not to mock this, but that's why 'Nonstick' cookware was invented - perhaps for the folks that do not know how to cook in stainless-steel. Easy remedy: return your set for a Nonstick set...if not, a little oil and lower your heat will do the trick. But, in addition to my stainless set, I will always have one nonstick skillet handy for my eggs (it's just much quicker and easier). But for searing and browning; there's no comparison to stainless-steel!
2.) Some complaint that the sides don't heat up compared to other brands: Yes they do, if you want to spend a little more $$ for the 'Multi-Clad' line. Also, unless you plan on cooking your food "on the sides", otherwise the encapsulated base heats evenly and works flawlessly for me.
3.) Stains, Marks and Colorful Swirls - If you use it to cook food, then expect the usual marks and normal wear - maybe even some tear. My solution for all of the above: 'BKF', OR unless you plan on displaying it for good.
The set:
There are TWO different 17-Piece sets available from the Chef's Classic line; the other one comes with a 2 qt. open 'Saucier' (and odd sizes for the rest) but I opted for this one because it is more versatile beginning with a 1.5 qt. Saucepan, then 2 and 3, a 12" Covered Skillet and for the Pasta Insert, etc, etc..
Again, for the money, they are as good as you can get. The product has a very solid feel to it and an even-weight distribution - light, yet heavy enough to do the task. Although I did find some minor flaws; like a few minor buffed-out scratches by the bottom edge between the encapsulated base on my 1.5 qt. The 'lips' on some of the larger pans (closer to the handles) seem to have bent down a bit; this produces a very small gap when the lid is covered, particularly on the 12" skillet where you can see an 'arch' effect with its lid on (the large lid is uneven on this one) and pressing it down once tends to reduce the effect. Though nothing significant, but it just appears to break that 'vacuum seal' and not so perfect tight-fit lid that was claimed by the mfg.
I have put all of them to a rigorous test for the '08 Christmas - '09 New Year's feast and they have performed very well. It cooks evenly on my old electric 'coil' stove top burner, although it could've been much better if I've had a gas range, this way I have more control of the cooking temperatures (very essential for heavy-bottomed cookwares).
Pros:
*Design - lip for spill-proof easy pouring.
*Good heat distribution (not great).
*Oven safe up to 450 degrees, that's high for a set priced like this.
*Handles: well balanced and stays cool no matter how long it's been on the burner.
*Most lids are interchangeable, especially for the 8" & 10" open skillets and they also fit other non Cuisinart that I have laying around.
*Nicely polished stainless-steel exterior and lids.
*Sturdy and well weighted/balanced.
*Well priced.
Cons:
*Workmanship and Quality Control (minor, this reduces one star).
*Slow to heat (especially the 9 qt Stockpot for cooking pasta compared to my other pot with the same amount of water).
*Pasta insert bottom sits a bit high (if sat lower, can prevent the use of more water so heat up time can be faster and to avoid boil-over spills).

This is a beautiful set of cookware and, I think, a great value...I paid $189.99 for 17 pieces, 15 of which are pots, pans & lids and 2 inserts..for pasta and for steaming. I like that there are 2 of the same size lid. You always get 1 lid that fits 2 items in the set and I would always use them at the same time and only be able to cover 1. No worries with this set--there is 1 lid for each. Also, I did a lot of price shopping before I picked this one and it's the only brand that calls it 17-piece and gives you all cookware. Every other set I saw that was over, say, 10 pieces-- the extra was knives or plastic utensils vs pots and pans. If it was 17 pieces, 7 to 9 of them were bowls, utensils, knives, etc. Rip offs for the prices they charged. And finally..the outside is nice and smooth, not ringed or otherwise textured...makes for nice cleanup and hopefully they'll stay nice looking longer than their predecessors. The ONLY thing I'm not thrilled with is that the lid handles do get warm...even hot. The pot and pan handles don't, but the lids definitely do. But for the price and quality? I have potholders.... Otherwise I would give it 5 stars. What the heck..5 it is!

This pan, like all the Cuisinart pans, is my favorite to use when I need a 12" skillet. It's a heavy-duty even-heating pan like it's "sisters and brothers"! If you already have any Chef's Classic pots or pans, the lid that fits on any pan with item number ending in 30 will fit on this pan. (Item number is on the bottom). With all the Chef's Classic pans, you usually don't have to turn the heat up as high as a cheapy pan; instead of high, use medium-high, for example. Since this does not have a non-stick coating, you'll often need oil for cooking. Here's a tip: hot pan, cold oil. Let the pan heat up before adding the oil. Also, these pans heat up FAST so watch your food! If anything gets burned-on badly, the pans just need a little soaking (maybe an hour, not overnight). Or, add water to the pan and "boil" the burned-on food off. I also use Barkeepers Friend cleaner to keep them shiny and looking new! Take note: if you've ever purchased a set of Cuisinart from a discount warehouse (i.e. Sam's Club, Cosco) there are not individual pans available that will match your set exactly. I called Cuisinart and found out that particular pan style is available only in sets from discount warehouses. BUT, the Chef's Classic line matches very closely, it's the closest match available.

This is the pan that you can cook anything in. Great for cooking stir fry or pan fry dumplings. The non-stick coating is excellent. Easy to wash and clean. Well-made hinges. Good quality pot. Love that it comes with lid. The pot is not as heavy as I thought, which makes it easier to wash in the sink.
The only con I have is that the smaller handle still gets a little hot and the rubber grip on that handle seems like it might come off one day if not careful. Other than that, we use this pot very frequently (several times a week) and enjoy it very much. If using this pot, I highly recommend cooking with bamboo or wood utensils so you won't scratch up the non-stick coating. I would recommend this pot to others and would buy again.
