I've owned this pan for about two years ... it's simply wonderful. The Calphalon Commercial line is the top of the line, just like the Professional, but with stay-cool handles. The thick, sturdy aluminum heats up quickly and evenly, and goes from the stovetop to the oven up to any temperature.
My favorite dish to make with this pan is a large omelette for two to four people. You saute the onions, etc., until carmelized, then add the whipped eggs, top it with diced tomatoes, basil, oregano and cheeses, then broil at about 450 for a couple minutes until browned. Simply wonderful!
I also cook stir frys, poach fish, bake casseroles, and brown meats in this truly Everyday Pan.
Now, for the issues: As with all true Calphalon products, you can not put hard-anodized aluminum into the dishwasher. It will damage the surface, leading to pits and discolorations, and void the lifetime warranty to boot!
Second, this is not a nonstick pan. If you want nonstick, buy Calphalon Commercial Nonstick, the best ever made (The Commercial nonstick line has the more advanced LRS3 coating versus the much less effective LRS coating on the cheaper Professional Nonstick II line).
To clean, simply buy a Dobie pad or its equivalent. For the tough stuff, I find a little Bon Ami or Dormond cleaner does the trick without too much effort.

I have been a gadget junkie, an electric everything person. With a kitchen full of appliances I have decided to clear it out. I have control of the heat, beautiful grill marks and it is a breeze to clean. This pan was a PERFECT solution to the George Foreman that I never really believed was clean after use anyway. The pan grills everything from burgers to pounded chicken breasts without the fat. No nasty dip pan to forget either. Simply put, the one for me. BTW, I use gas, I cannot rate this product for electric stoves.

I absolutely love this frying pan. 1) I can cook enough pot stickers (lid is essential) to feed my family of 4 in just two batches. 2) Making fried rice is so easy, because of the non-stick feature, again the large size is really convenient. 3) Even the always sticky Chinese Chow Fun is no problem for this non-stick pan. 4) Yes chinese dishes are no problem for this pan, and it is equally fantastic in saute'ing western style dishes. I make pancakes, scramble eggs, pork chops, steaks, saute fish, paella, chili and many other dishes using this pan.
So far, under almost daily usage, the non-stick surface is still looking very good, without any flaking and scratches. I use only wood and plastic spatulas. The large size and higher walls make it easy to toss and stir the food without spilleage, which makes cleanup much easier. BTW, my cook top is gas, and the pan distributes the heat very evenly over the entire surface.
I hope they keep making this pan, because I'm buying another when this one finally wears out. My pan is entirely made of metal, without any plastic on the handles, so I'm able to put it into the oven for baking as well.
Jan 17 2011 Update,
A year and a half later and the Pan is still in great condition. Non-stick material is still working fine. I'm giving it to my daughter, because she wanted it for making gyoza's. Time for me to buy a new one.

I have done about a dozen meals in this wok now. It cleans very easily, and has cooked some wonderful meals. I have read the manual, which is fine. I use an electric stove, and have found that I need to use a higher temperature than the manufacturer recommends in order to get the wok to perform as desired. I use a medium-high heat.
In general, the wok heats nicely and keeps food warm if you have to wait. The non-stick surface works very well. The food does not stay on the sides and has the tendency to slide down, but the cleaning of the wok afterwards is a snap. I don't believe you will find a nicer wok in this price range. To get a nicer wok you will have to go to china town, etc...
I have big hands and I find the handles a tiny bit small. I am 6'5" tall. The lid keeps the steam in, but be careful when tilting the lid as it will let all the water drop at once. The glass at the top of the lid is nice in theory, but it fogs with water droplets, so you really can't view once the lid is on. I use a hot pad when removing the lid because the metal part of the handle does get hot.

I bought this at [a local store]. I love this pan. Tough, durable, nice heavy (without being too heavy) weight,able to take oven to stove to fridge without warping unlike some other cheap pans I have. Cleaning is a breeze. This really WOULD be my everyday pan except for the fact that it's a little smaller in size to be truly an everyday pan and I'm only cooking for 2 people. Fork over the money and pay a little more to get the 12 inch pan. That will be much more practical.

MADE STUFFED FLANK STEAK BRIOGOLE WITH VEGETABLES. BRAISED VERY WELL IN

I've been unhappy with the performance of any number of nonstick frying pans with my glass top electric stove. It seemed whatever brand from cheapest up to expensive, all of them would warp concave at higher heat levels to where only the very center would have limited contact with the stove. I'd been searching for a THICK pan that would hopefully resist this effect, but almost everything, regardless of price, appears to be the same (thin) thickness.
So last week I'm browsing through the mall and saw this pan set and was amazed at the thickness. It looked twice as thick as everything else and had a substantial weight difference as well. Mall price was over twice what Amazon was selling them for so I just came right home and ordered this set along with the 8 inch single to round out the collection.
What a disapointment when these arrive and are just the same thickness and weight as everything else. Was I crazy and misremembering what I'd seen at the mall? No, because the 8 inch pan that also arrived was the thick version! Looks like Analon decided to cut costs somewhere along the line. A quick google search and I confirmed I'm not the only one to experience this. Too bad I'd torn the packaging off before I noticed otherwise I'd be returning them. I don't feel right giving it one star since $50 for a nice set of thin nonstick pans is not a terrible deal, but I'm not happy with the bait and switch Analon pulled.

I have Lupus, and suffer from the growing loss of mobility in all of my limbs. I love to cook, but have struggled to continue using my expensive cookware because it is now too heavy for me to safely manage.
I have agonized over this development and had feared that I would be forced to replace my cookware with really thin (light and cheap) aluminum pots and pans. If so, I knew I would be giving up a lot of cooking flexibility and the quality I had learned to rely on and love.
At least, I thought that until Rachael Ray put out her imaginative cooking line! Not only does this five-quart oval saute cook like a dream, it weighs about half of what my other cookware does, has that great helper handle to lift it and serve the contents, and cleans easier than ANY pan that I own at any price.
As a result, I can continue to do what I love -- cooking -- despite my illness! When you're disabled, you have to give up a lot of things that had been meaningful in your life, not to mention independence. I applaud ANY product that is disabled-compatible.
In reading the reviews for this great pan, I hadn't noticed anyone raving about its weight. For folks like me, that's a really huge deal.

Anolon 'Advanced' is the much higher quality, and, for some quirky reason, is priced $15 less than the Calphalon! I pan-grilled some filet mignon steaks (am savoring them now) and was impressed at the signature 'sear marks'. Cleanup is a breeze and reviewers should note that the Anolon 'Advanced' line has not been plagued with the shedding of the non-stick coating (as both the 'Commercial' and 'Simply Calphalon' lines have been).
This will not take the place of an outdoor grill, but it does bring a taste of summer into the cold winter months. 'Cook's Illustrated' also gave the Anolon 'Advanced' 12" Deep Covered Grill Pan high marks, but this shallower, non-covered grill pan is $25 less and besides, who covers a grill pan when it is grilling anyway?
PS: I'm glad I 'recycled' my 10+ pound Lodge, cast-iron grill to my weight-lifting son for Christmas! :o)

I bought the pan because I was in the market for a griddle type pan, and I was really interested in the new oval shapes in cookware. I enjoy Rachael Ray's show and follow quite a few of her recipes, and that orange trim really caught my eye, so I bought it.
Other than the fact that I wish the handle were on the shorter end rather than centered at the widest point, (because maneuvering can be tricky unless you have a huge rangetop), I'm pleased with the way it cooks. I'm lucky enough with a large enough kitchen that I can leave it out, because it's rather eye-catching, (I bought the saute' pan too, with the lid) and I find myself using it more and more often. It's great for searing. I made wonderful porkchops last night. I recommend it if you don't want to spend a fortune, but still want those nice grill marks in a pan.

This is a great piece of equipment for many cooking tasks; don't let the "stir-fry" moniker limit your uses of it. In fact, because of its large flat bottom, it doesn't quite work as well for stir-frying as a traditionally shaped wok, and the nonstick coating, while durable, means you have to be a little bit too careful when moving food around -- a true stir-fry should be stirred with abandon. But this large pan is good for all kinds of sauteeing, and because of the high sides its capacity is tremendous. Combined with the tight-fitting glass lid, one of the best uses of this pan is to make risotto for a huge crowd; it's also really nice for tossing almost-cooked pasta into a hot sauce.
A few minor notes: be aware that the pan is really very large, and quite heavy, and because of this it takes a long while to heat up. It can be hard to lift when full of food. You probably wouldn't want to use this for a side dish, to whip up a little sauce on the side, or to cook for one or two people. It can block nearby burners on a small stove. The silicon-covered handles are oven-safe to a degree, but they're not magic; coming out of a hot oven they will be painfully hot to the touch.

It's heavy and dead-flat. What can you say about a griddle except that it does exactly what you wish a griddle would do. There are no hot-spots, and the handle stays cool. (The Calphalon Contemporary handles are big, and may get in the way occasionally -- but they stay very cool.)
One thing, though -- the non-stick surface is *really* non stick. Make an omlette and it'll spread over just about the whole bottom of the pan in no-time-flat -- which is just great, so long as you like really thin omlettes. Over-easy eggs can be a bit tricky because it's so slippery -- it's not that easy to get the spatula underneath! (Part of that's because plastic and coated spatulas are thicker than metal ones.) One time I almost pushed an egg right off the griddle and onto the stovetop. But anyone who's ever had something stick to a griddle will not complain that nothing can stick.
Cleanup is strange. It just doesn't get dirty. I've only had this awhile, but I've used it twenty times, and the nonstick is not only still in perfect condition, it doesn't even show the "bright spots" that, with high-quality non-stick cookware, indicates some mechanical burnishing. I think this will last forever.

I was using my George Foreman grill for almost everything, but decided that once in a while I didn't want to clean the grill pans and I would rather cook on the stove, so I ordered this Calphalon grill pan.
I have other Calphalon products and they hold up very well. The non stick finish makes it super easy to clean. I do not use any non stick spray oils in any of my pans just olive oil, butter or canola since it is my understanding that the non stick sprays can ruin the finish. I also hand wash my pans.
So far, I am very pleased with this pan for the price and the durability.

I had been toying with the idea of a non-stick "grill pan" for some time, and could never justify the expense... After all, I had a large George Foreman, and used it very rarely.
But I was running out of cookware to shop for , and began tracking several with the plan of buying the first one that came on at a great price.... I tracked both All Clads, and this one. I almost bought the large All Clad, but discovered they didn't qualify for the Amazon promotion, so that blew that!
Then this one came up at $29.99 and I jumped all over it!
I have done beef steaks, pork steaks and salmon on it with excellent results. Cleanup, though not a breeze, is quick enough. Cooking residue tends to stick tighter on either side of the rounded ribs, but I have yet to need anything more than a little dish soap and hot water on a terry dish cloth.
One caveat - I seriously doubt those with solid top Electric Ranges will be satisfied with this pan. The bottom is not smooth, but rather follows the ridged cooking surface - in reverse. I am not familiar with these ranges, but understand a perfectly flat surface is essential to successful cooking.
Now I'm thinking about the 11" square griddle....
