The Amazon description of this says it is suitable for "any cooking surface," without any restrictions, and the Sitram Web site specifically says "induction ready." So to be sure I e-mailed Sitram, and they assured me that it was indeed induction ready. Well, it is not. Aluminum and stainless steel, without the ferromagnetic material needed to work on an induction cooktop. Amazon did not explicitly misrepresent it, but Sitram did. If that doesn't matter to you, it looks like a fine pan. If it does matter, be warned not to believe what you read.

I love Emile Henry. They are completely eco friendly. The cookware itself literally comes from the earth! The Burgundian clay mixture comes from decomposed rock that is millions of years old. Even the glazes and finishes are derived from all natural sources and are non toxic.The Emile Henry factory is also eco friendly and adheres to strict environmental practices.
If I know I can throw some veggies into the wok and have a meal in about five or ten minutes with less than five minutes cleaning time, I'm in! Sometimes by dinner time you're tired and not up to the challenge of making a healthy meal. But you still want something hot and hearty. With this wok, there is no excuse not to eat healthy. With the wok, you only lightly cook the veggies, so there are more healthy enzymes in tact and the nutrient level is higher.
I put a tiny bit of coconut oil in the pan, along with a couple of garlic clove halves (to be taken out later, it's there just to flavor the oil). Then I toss in whatever veggies I have on hand. Always broccoli, maybe some bok choy or napa cabbage, some carrots. A little chili oil or grated ginger if it's a cold day, some green herbs like cilantro,Thai basil, or lime leaf. There are infinite possibilites and flavors to come up with. In five minutes or less you have a great meal, just like that. I like it served up with a big salad and if you need something heartier, some quinoa.
The wok is also oven safe and for Thanksgiving, I used it to make my stuffing. It was so easy! First I sautéed some minced onion, then added some diced mushrooms, then diced celery. I let the flavors mingle, then added whole grain bread cubes (already in the bag from the co-op). Then I poured some vegetable broth over it, added some herbs, mixed it up, put the lid on and baked for about an hour. It was crazy good and there was just barely any left to enjoy the next day. Clean up took just a couple of minutes even though some of the stuffing was pretty baked on. I will definitely be repeating this for our Christmas dinner.
The wok looks wonderful on the table and the ceramic acts as a warmer, keeping the food from getting cold. You can't go wrong with Emile Henry. I know it's a little spendy, but this is something you buy one time. And then you pass it down through generations, so I think it's well worth it. It would make a killer holiday gift for the foodie or cook on your list

The description fails to note a warning contained on the back of the product's label regarding glass/ceramic cooktops; "Use of high or even medium high heat will damage this pan and your stovetop."
The description states, "The pan's heavyweight construction". Actually the pan is made of very thin, lightweight aluminium. This explains how the pan can be damaged by medium high heat I guess.
Yes, I'm aggravated by the omission and false statement. It might show.
I returned mine.

I've been unhappy with the performance of any number of nonstick frying pans with my glass top electric stove. It seemed whatever brand from cheapest up to expensive, all of them would warp concave at higher heat levels to where only the very center would have limited contact with the stove. I'd been searching for a THICK pan that would hopefully resist this effect, but almost everything, regardless of price, appears to be the same (thin) thickness.
So last week I'm browsing through the mall and saw this pan set and was amazed at the thickness. It looked twice as thick as everything else and had a substantial weight difference as well. Mall price was over twice what Amazon was selling them for so I just came right home and ordered this set along with the 8 inch single to round out the collection.
What a disapointment when these arrive and are just the same thickness and weight as everything else. Was I crazy and misremembering what I'd seen at the mall? No, because the 8 inch pan that also arrived was the thick version! Looks like Analon decided to cut costs somewhere along the line. A quick google search and I confirmed I'm not the only one to experience this. Too bad I'd torn the packaging off before I noticed otherwise I'd be returning them. I don't feel right giving it one star since $50 for a nice set of thin nonstick pans is not a terrible deal, but I'm not happy with the bait and switch Analon pulled.

I would have never bought this pan if I had seen the reviews here, but I bought it on an impulse at a cookware outlet and I'm so glad I did! My pan doesn't have any of the problems (hot handle, peeling nonstick) that the other reviewers here have experienced. I suspect that since those earlier reviews the pan has been redesigned by the manufacturer.
Whatever the reason, I absolutely love it! It's the only pan I've ever found that is the perfect size (4") for english muffins and orowheat sandwich thins. Honestly, I'm a rather practical person, so I generally don't buy things with little characters on them, but this pan has ended up being the most-used pan in my kitchen. It's perfect for making scrambled egg sandwiches, so I use it several times a week.
If the handle starts heating up or the nonstick peels off, I'll update this review, but in over six months of weekly use, it's performed like a little champ! And, over time, the cartoon egg on the handle has grown on me, it seems kind of shocked or amazed... perhaps because it has to watch me cook an egg!
BTW-The secret to light, fluffy scrambled eggs is to use a low heat and stir constantly. It takes a little longer, but it is so worth it.

While I love my ceramic cooktop, I felt bereft that I could not use my beloved cast iron skillets on it. Teflon pans have their place, but they produce rubbery, bland over-easy eggs. And no matter how much butter I added to my Mauviel skillets, the eggs always stuck and broke when I tried to remove them. Luckily, I read about this pan in Sauveur's article on readers' favorite kitchenware. Apparently I wasn't the only one, because this pan was backordered for several weeks. But it finally arrived, and we are an egg-loving family once again. The pan's TechnoTough interior produces the right sizzle to set the egg whites and brown their edges, yet isn't scratched by my favorite metal spatula. The pan's sloping sides also make it great for stir-frying. Clean-up is a breeze with the non-stick coating. The only thing I don't like is the central temperature spot. It is supposed to become darker when the pan is hot enough for cooking, but I find the color change difficult to discern.
