Universal N180 Natural Cast Iron 3pc Skillet set Review

Universal N180 Natural Cast Iron 3pc Skillet set
Average Reviews:

(More customer reviews)
I bought this set after the recent issues with Teflon. I did my research on all non-Teflon items and decided upon iron cast pans as the Aluminum pans do give off some aluminum into the food and may (key word here is may) contribute to Alzheimer's (according to some), and the Stainless steel gives off chromium and nickel into the foods, both of which I am allergic too. Pure copper with no aluminum is extremely expensive; a good set of a few items are $600+. There are also ceramic glass pots and pants made by Corning/Pyrex called Visionware (also known as Visions) that can be found on eBay (and a few are left here on Amazon) as they are no longer in production. Finally, there are also items made of ceramics and clay that should be safe alternatives
The items have been great so far, however, you will really want to do some research in google (or any other search engine) on how to care for them as there are some things that you really shouldn't do such as rinse a very hot pan in cold water (it will crack or break) etc. In addition, you will also want to so some research on how to "season" them which makes them very close to being non-stick (you basically smear them with an oil than can take high temperatures and "bake" the pans for an hour at 350 degrees Fahrenheit). I did this and I just made eggs from eggbeaters without any oil which always used to stick in my nonstick Teflon pan, but very little stuck in my seasoned cast iron pan.
The downsides are that the handle can get hot when it is left on the stove for long period of time and that you cannot stick the pan into the dishwasher (and I tried....it will come out a little bit rustier-but the little rust does come off very easily). The sizes are also a little bit on the smaller side for me. So I think I will buy one more in a larger size.
The upsides are price, no chemicals (except for some iron) in your food, easy to care for, and very non stick when seasoned. This is a great starter set.

Le Creuset Oval Fish Skillets Review

Le Creuset Oval Fish Skillets
Average Reviews:

(More customer reviews)
Creuset makes the best enameled cast iron cookware on the planet and this oval fish skillet is no exception. It's dimensions however, while being great for cooking a whole fish, require the use of 2 burners (medium size) adjacent to each other. I have a Viking cook top and the largest burner is not capable of heating the pan out to the far edges of the oval, in spite of Creuset's legendary ability to distribute heat evenly. If you don't have 2 adjacent medium sized burners on your cook top, this pan is not the right choice for you. The photos suggest a shape that is circular and just slightly out of round, but this is a very serious oval. Make a template using the published dimensions to be sure this is the right pan for you before ordering.

With its large oval shape, this enameled cast-iron skillet comes in handy when preparing a variety of classic foods on the stovetop or in the oven. Use it for anything from broiling multiple cuts of meat to searing chicken breasts or frying freshly caught fish. The large size skillet measures 15-3/4 inches at its widest dimension and provides gently curved slides that make it easy to flip food or slide it gracefully from the pan to a plate or platter.
Like other pieces in Le Creuset's line of enameled cast iron, the cookware's exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its smooth interior provides a durable, satin black enamel--no need to season the cookware in the oven before use. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the skillet cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. The cookware also provides a strong iron handle with an opposite helper handle for a steady grip, and it can be safely used at any oven temperature, under the broiler, and on any stovetop, including induction. Beautiful enough for the table yet durable enough to outlive its lifetime limited warranty, the cookware brings joie de vivre to any kitchen it graces and should be hand washed for best results.

Viking Stainless Fry Pan Review

Viking Stainless Fry Pan
Average Reviews:

(More customer reviews)
I received this as a Christmas gift and absolutely love it. It has a large cooking area.
The skillet is 11 x 2 inches and has 7 layers of aluminum alloys.
Everything browns and cooks evenly. There are no hot spots. Foods can be sauted in the skillet and then finished in the oven or broiler up to 600 degrees F.
Unlike most other skillets, this pan has a wide bottom area. The skillet is 11 inches, the bottom which actually comes in contact with the heat is about 10 1/2 inches. I compared this skillet to others and, although they are 11 or 12 inches across, only 9 inches actually comes in contact with the heat source because they have slopping sides. The sides of the Viking skillet are almost straight.
Like all Viking, this skillet needs to be cleaned with Bar Keeper's Friend and then rinsed with soap and water to maintain it's brand new look.
It is advisable to first season Viking cookware by first washing it and then placing a tablespoon of oil in the pan and heating it for a minute or two and then washing it again.
This cookware makes me want to cook more. It is a very high quality pan that should last.
If you want quality pans that will last a lifetime, Viking is for you.

Lodge Enamel Coated Cast-Iron Skillet, Red Review

Lodge Enamel Coated Cast-Iron Skillet, Red
Average Reviews:

(More customer reviews)
This handy little skillet is actually a HEAVY WEIGHT! It has the durability of cast iron, and the convenience of non-stick coating. I hesitated when ordering because I have had teflon skillets that would flake after a while, but this is not like the non-stick of old. It has a 25-year limited warantee!
Since I have an electric stove, it took some time to learn how to adust the stove because it retains the heat so well. I finally started turning the stove off the last 10 minutes or so. That works great for me. Also, if I'm cooking a steak, I sear it good on one side, turn it, and finish cooking in the oven at 450* for another 10 minutes. That's another thing I like...the fact that the skillet can go right from the stovetop to the oven. Careful, because the handle does get very hot, and also the skillet is HEAVY because it's cast iron, but it's a good heavy!

Sitram Catering 11-Inch Commercial Stainless Steel Fry Pan Review

Sitram Catering 11-Inch Commercial Stainless Steel Fry Pan
Average Reviews:

(More customer reviews)
I was surprised at the weight of this pan; I have been a devotee of "Calaphon" for over 20 years. I am starting to convert to stainless little by little. I have some Cuisinart that is also very good, but I like this better.
The handles are angled up which keeps them out of the way and lets them clear other pans on the stove if you have a major cooking project going. The handle also has a gap where it is welded to the pan which lets fluids drain down rather than collect in a pocket. It can make your stove a little messier, but it is easier to keep the pan clean.
The interior is silky smooth and requires just a small amount of oil to keep food from sticking. The recommend that you use non-metalic utensils to keep from scratching it. The heavy layer of copper bonded between two layers of stainless on the bottom works great to distribute heat accross the pan. The side are a single layer of heavy stainless, so they do not get hot and cause food to burn on.
This pan is very well made and should last for a lifetime.

We have a full line of Calphalon Contemporary Stainless pieces, which we dearly adore, and an 8-inch Contemporary Stainless Nonstick pan. All are induction capable: they pass the magnet test and are even marked with the induction logo. For some odd reason, the 12-inch Contemporary Stainless Nonstick pan we received was NOT induction-ready. Paula Deen Cast Iron Skillets Review

This is a wonderful skillet. It is nice a heavy which helps it to heat evenly. The handle is long so it doesn't heat up too much when cooking. Even with the pan on the stove a couple of hours the handle was only warm to touch. The small side handle does heat up quickly so be careful. The design is functional with the little spout on the side to pour off liquid and the swirl pattern gives what might be considered a "rustic" pan an elegant feel. Though it is preseasoned I would recommend seasoning it yourself as well. Great pan! - just be prepared for a workout, it's heavy! :-)

I purchased this frying pan after being disappointed by so many others. The biggest problem I have with large frying pans is that they don't stay flat on the stovetop. I have a flat top stove. I LOVE THIS PAN! It's heavy duty. Heating is EVEN. The handle is very comfortable and it's super thick stainless steel has remained very flat. Clean up is a breeze. No problems at all with this one. I highly recommend it. Like the old saying goes: You get what you pay for. I would definitely purchase this pan again.

Emeril Pro-Clad Stainless Steel 12-Inch Fry Pan Review

Emeril Pro-Clad Stainless Steel 12-Inch Fry Pan
Average Reviews:

(More customer reviews)
I received this pan for free via a promotion here at amazon. If you bought $300 or over in emerilware, you received this and a 10" cast iron grill pan for free. The grill pan imediately went into my camp/survival kit since I can't use cast iron on my glass top stove, and since cast iron works amazing with a campfire. The 12" tri-ply pan this review is about, is the best pan I've ever owned. Let me share why!
I own the full 10 piece emerilware pro-clad set. This is a larger pan that the set does not include. The pan itself is flawless in construction. The handle is shaped right to divert heat so you do not need a hotpad holder while cooking on the stove. The full tri-ply construction seamlessly melds an aluminum core between two layers of stainless steel for optimal heat spread. it is priced very reasonable, considering this pan is made by all-clad, who sells an idenically constructed pan for far more money. You're essentially getting all-clad quality for a bargain price.
There's a lot of caveats to owning a stainless steel pan over a non-stick. There are also a lot of advantages. cooking on stainless steel is different than non-stick. You won't make eggs in stainless steel. anyone who tries A) doesn't own a nonstick pan, or B) is a stainless steel fan who can't admit the limitations of the pan. Stainless steel is designed to stick! that's why we make meats and other savory dishes in stainless steel. after its cooked, we have all those wonderful bits on the bottom! we deglaze with wine or broth, and can reduce the liquid and make a sauce or gravy out of it. You can't do that with nonstick. For making Eggs, flatbreads, corn and four tortillas, pancakes, and especially creppes, I still will use my old trusty 10" nonstick skillet. While I may be able to cook some of those items in stainless steel, I'd have to use a large amount of grease to prevent sticking. I can just pam spray my nonstick and go for less calories and less headaches.
Some people also complain stainless steel is harder to clean. high temperature paints a rainbow over your pan, and things that stick can be hard to unstick without using abrasives that will scratch the pans. It's easy if you know two great products.
1) distilled white vinegar. This will take off all rainbow effects and waterspots, and disifects as well! I always keep a spraybottle of the stuff in the kitchen for sanitizing surfaces and pans.
2) for restoring the shine to your stainless steel, and getting hard to get out stains, try barkeeper's friend: cookware version. This version can be bought from the barkeeper's friend website (just do a google, I don't think I'm permitted to link outside amazon in reviews even if amazon doesn't carry the product). The cookware version is formulated to not scratch your pans and makes them look new. leading stainless steel makers like allclad and calpheon all reccomend this product to clean. Infact, I just received a 4pack of the 12oz bottles in the mail today.
Overall, I think you can't go wrong buying any emerilware pro-clad pan. Its quality stainless steel at a great price.

Lodge Signature 10-Inch Seasoned Cast-Iron Skillet with Stainless-Steel Primary and Assist Handles Review

Lodge Signature 10-Inch Seasoned Cast-Iron Skillet with Stainless-Steel Primary and Assist Handles
Average Reviews:

(More customer reviews)
We have switched from a gas cooktop to an induction cooktop. With the glass surface the pans need to be flat (so they won't wabble) and smooth to avoid scratches. With induction cooking the pans need to be sensitive to the magnetic induction energy (i.e a type of metal that a magnet will stick to). This pan fits all these requirements. We had an old cast iron pan that had a warped bottom so would wabble and spin on the glass. Most new cast pans have a fairly rough bottom, often with insignias and wording molded into the cast iron that could scratch the glass. This pan is 100% smooth on the undersurface. We did not want an enameled pan since the cooking surface is also enameled, hence can't be seasoned, and the enamel can chip anywhere (and usually does over time). This is a solid, well built piece. The stainless handles stay quite cool during frying, which is a nice improvement on the standard cast iron pan. These handles look good also, and fit in aesthetically with high quality cookware (like All-Clad etc.). As another reviewer stated, it is a heavy pan and the second handle is a good idea. It is a bit pricey, but was exactly what we were looking for, and it will probably last a few generations.

I was so excited to get this since it was so affordable, I thought! But you get what you pay for! This smelled like enamel, so I don't know what type they use. It didn't smell completely safe, though! It looks like only one layer of enamel and you can see the metal through it with imperfections in the iron peaking though. The edges are rough and uneven. I bought one 11" Lodge enamel pan for about the same price as this and it was worth that and more! The Lodge has excellent quality!

All-Clad MC2 Nonstick Fry Pans Review

All-Clad MC2 Nonstick Fry Pans
Average Reviews:

(More customer reviews)
The ongoing debate over cookware at my house is over: All-Clad is the best cookware overall and is worth the extra money. Our coppers tarnish and require retinning. Our encapsulated disk cookware (Reverere and Farberware) suffer from loose and broken plastic handles and too-small disks which limit the cooking area of the fry pans. The biggest debate was between Calphalon and All-Clad LTD nonstick models. My wife really liked the lighter weight of Calphalon's Commercial Nonstick line. After living for both for several years, All-Clad has shown its overall superiority in the following ways:
1) Durability. The non-stick finish All-Clad uses wears like iron. The Calphalon's finish shows many more scratches and blisters.
2) Denser anodized finish. The All-Clad LTD finish is much denser and more even that that on Calphalon. This makes it more attractive and easier to clean. On the MC2 stuff the finish is not anodized, but it is tightly frosted and well made. It's quite attractive too. I've started to accumulate MC2 stuff because it's cheaper and performs just as well. The LTD stuff does look better on a rack mixed with Calphalon. It's tough to beat black aesthetically.
3) Greater heat sensitivity. You actually cook with the stove set to a lower temperature with All-Clad. It appears to register changes more quickly. Both types of pan are good in this reguard - but the All-Clad is noticeably better.
As a fry pan, the All-Clad MC2 12" fry pan hits on all cylinders. It's big enough for a 4 egg omlette, or most of pound of bacon. It's battleship built, well balanced, even heating with great sensitivity. The handle stays cool and is angled so that you can lift the heavy contents without undue strain on your wrist. The nonstick finish is effective and tough as nails. The MC2 finish is durable and very attractive. Ultimately I'm more partial to the LTD finish because it matches well with other anodized aluminum cookware - and you can clean it very effectively with Ajax. The MC2 finish will yellow a bit over time. Real chefs just let it get brown. It looks like real cookware. In any case, exterior aesthetics don't relate to cooking performance.
Update on the MC2 finish: after using it for months and letting it get nice and brown I tried cleaning it with the 3M scrubby and Ajax/Comet cleanser I use with the LTD finish and it worked like a charm on the MC2. Just make a nice paste and power away the burnt on grease in moments leaving a nice buffy shine. Don't worry about scratches - the MC2 finish is a fine patina of minute scratches anyway! It looks great and is basically indestructible.

What's a kitchen without a fry pan? This humble piece of cookware is probably used more often than any other. So if that's the case, it only makes sense to invest in one that will stand up to frequent use. Eggs and bacon in the morning, a grilled cheese or sauteed veggies for lunch, burgers or chicken breasts for dinner, day in and day out All-Clad offers superior performance. The new MC2 cookware combines the industrial style of a brushed aluminum exterior with gleaming stainless steel stay cool handles. A non-stick interior speeds up cleaning and allows you to cook with minimal to no fat.

Cuisinart Chef's Classic Nonstick Hard-Anodized 14-Inch Open Skillet with Helper Handle
Average Reviews:

(More customer reviews)
Despite the bad reviews, I also tried this pan. It is awful - DON'T WASTE YOUR MONEY!
To address issues other have had -
(1) It was perfectly flat out of the box, but warped as soon as medium heat was applied. Probably because it is so thin. Note the 10" crepe pan weighs as much as this monster of a pan, and appears to be at least 3 times thicker.
(2) It is way too thin to heat evenly - I think our heavy duty cookie sheets are just as thick! To check it out, I used an infrared thermometer and found out that once the hottest part of the pan reached about 350 (ideal for things like eggs and pancakes), there were parts that were 75 degrees cooler. This means burnt eggs and raw pancakes. Yum.
The size would probably make a good chicken fryer for a large family, but it has no top, so I'm not sure what you really could do with it, so mine went back today.

I've been cooking with cast iron for over 3 decades and now have more than 30 pieces. I ordered this skillet because of the sloped sides, but have come to love the shape of the handle as well. Add in the assist handle and this is an incredible pan. At 8 pounds, it is heavy, but that weight helps it heat evenly. I rarely prepare omlets, but fried eggs with cheese and salsa work well in this pan as does reheating food in the oven. The pre-seasoned finish is great, but clean it according to Lodge's recommendations, or you'll have to re-season it.
