These pans put together the best qualities of cookware....
non-stick and stick
Amateur cooks will expect these pans to be "fully" non-stick. If you expect that, then buy a pan for $9.99 at your local department store.
These pans have non-stick qualities but not fully non-stick. You want food to stick somewhat, which in turn makes the fond on the bottom of the pan, which you turn into a sauce or gravy.
The stick qualities give you the proper browing and carmalization your looking for in cooking foods on your stove top.
Clean up is a snap! It is best to use Bar Keepers Friend as this removes all residue from the pan. I have found that regular dishcleaners do not work properly.
These are expensive, but they will be the only pans you ever need to buy, if you take care of them properly. Do not throw them into cold water right from the stove. All pans will warp if you do this.
They are a nice heavy weight gauge too.
As a professional chef, I have used many brands of pans and these are the best currently on the market. I do not use them in the restaurant as they are expensive and they would get destroyed in our fast paced atmosphere, but I have 2 complete sets at home and you get what you pay for. Perfection!
I mentioned before, if you expect these pans to be totally non-stick, then look for something else.

This handy little skillet is actually a HEAVY WEIGHT! It has the durability of cast iron, and the convenience of non-stick coating. I hesitated when ordering because I have had teflon skillets that would flake after a while, but this is not like the non-stick of old. It has a 25-year limited warantee!
Since I have an electric stove, it took some time to learn how to adust the stove because it retains the heat so well. I finally started turning the stove off the last 10 minutes or so. That works great for me. Also, if I'm cooking a steak, I sear it good on one side, turn it, and finish cooking in the oven at 450* for another 10 minutes. That's another thing I like...the fact that the skillet can go right from the stovetop to the oven. Careful, because the handle does get very hot, and also the skillet is HEAVY because it's cast iron, but it's a good heavy!

The only reason why this doesn't get the last star, in my book, is because of its somewhat limited usefulness. However, if you live in an apartment or otherwise anywhere where grilling is impossible, this is the next best thing....like all other Le Creuset products this heats evenly and wonderfully and takes abuse. I got mine as part of a 6-piece set (along with a Dutch Oven, Baking Pan, and Casserole) and sorta at first saw this as a "filler" piece. However, to it's credit, this pan can do even easilly-burned items like tofu dogs and fake bacon WONDERFULLY, which shocked me--I was convinced that nothing could give a "grilled" effect to those items. I even got adventerous the first time I used it and grilled some apple rings. I panicked when some sugar seemed to be burnt on for good despite a good soaking, but after the pot had been dried and put away for 48 hours it flaked right off. Forget what you know about nonstick surfaces, btw, and banish those bad memories of cruddy, flaking Teflon from the 70's. Just treat this well (I only use wooden utensils on it) and it will treat you well. Follow the instructions and enjoy! Just be sure to use a potholder and realize that once this thing gets hot it STAYS hot for a LONG time.

The ongoing debate over cookware at my house is over: All-Clad is the best cookware overall and is worth the extra money. Our coppers tarnish and require retinning. Our encapsulated disk cookware (Reverere and Farberware) suffer from loose and broken plastic handles and too-small disks which limit the cooking area of the fry pans. The biggest debate was between Calphalon and All-Clad LTD nonstick models. My wife really liked the lighter weight of Calphalon's Commercial Nonstick line. After living for both for several years, All-Clad has shown its overall superiority in the following ways:
1) Durability. The non-stick finish All-Clad uses wears like iron. The Calphalon's finish shows many more scratches and blisters.
2) Denser anodized finish. The All-Clad LTD finish is much denser and more even that that on Calphalon. This makes it more attractive and easier to clean. On the MC2 stuff the finish is not anodized, but it is tightly frosted and well made. It's quite attractive too. I've started to accumulate MC2 stuff because it's cheaper and performs just as well. The LTD stuff does look better on a rack mixed with Calphalon. It's tough to beat black aesthetically.
3) Greater heat sensitivity. You actually cook with the stove set to a lower temperature with All-Clad. It appears to register changes more quickly. Both types of pan are good in this reguard - but the All-Clad is noticeably better.
As a fry pan, the All-Clad MC2 12" fry pan hits on all cylinders. It's big enough for a 4 egg omlette, or most of pound of bacon. It's battleship built, well balanced, even heating with great sensitivity. The handle stays cool and is angled so that you can lift the heavy contents without undue strain on your wrist. The nonstick finish is effective and tough as nails. The MC2 finish is durable and very attractive. Ultimately I'm more partial to the LTD finish because it matches well with other anodized aluminum cookware - and you can clean it very effectively with Ajax. The MC2 finish will yellow a bit over time. Real chefs just let it get brown. It looks like real cookware. In any case, exterior aesthetics don't relate to cooking performance.
Update on the MC2 finish: after using it for months and letting it get nice and brown I tried cleaning it with the 3M scrubby and Ajax/Comet cleanser I use with the LTD finish and it worked like a charm on the MC2. Just make a nice paste and power away the burnt on grease in moments leaving a nice buffy shine. Don't worry about scratches - the MC2 finish is a fine patina of minute scratches anyway! It looks great and is basically indestructible.

suspicious of non-stick surfaces since the first pans appeared on the market, my only experience was with $20 pans with screw-on handles. you know the type. i converted all my pots and pans to all-clad and viking when i moved in 2000 and left non-stick pans in the trash. but. but last year i got an all-clad non-stick pan and i am now a convert. it is a joy to cook with and is as easy to clean as the dinner plates (i do it all by hand).
after reading these reviews i felt compelled to respond. reading about pans and surface coatings i learned that non-stick surfaces are designed to get hot as 500 degrees before they degrade. in fact, the surface material actually "off gasses" before you see the material degradation.
to enjoy the pan the way it was intended do not use it in high temperature situations. if you are going to sear, then oven broil chicken, for instance, use a traditional pan. if you are sauteing onions and vegetables, reducing a stock, or doing a stirfry, use the non-stick.
these are pricy, i know, so if you can afford only one, get the regular surface (which cooks have been using forever) and you will have a pan you can give to your grandkids.
**update**
this pan lasted me 5 years before i gave it away. it is definitely no longer non-stick and requires gobs of butter or oil to do its task. since i already have a traditional surface with the All-Clad 51125 All Clad Stainless-Steel 12-Inch Fry Pan with Lid and a non-stick equivalent with Lodge Logic L8SK3 10-1/4-Inch Pre-Seasoned Skillet, i don't need this non-stick pan cluttering up the kitchen.
reduced from 5 stars to 3 stars. i still love all-clad, but i will not buy expensive non-stick pans again.

It says this is a 2 burner grill pan but that is so wrong. It does not cover 2 burners it sits in the middle of each burner causing the handles to be right ove both burners. Very dissapointing, I love the le creuset normally and was really looking forward to having a grill pan made by them. Unfortuanatelly due to the shape it will not work for just one burner either. Hopefully they will come out with an updated one, until then my search for a good 2 burner grill pan continues.
